Banana Bran Muffins

Love these! Sometimes I add cinnamon or semi-sweet chocolate chips, there are lots of variations you could implement! I also use half whole wheat flour and pecans over walnuts, just as a personal preference. They're such a great, wholesome snack on the go!

Frozen Vegetable Stir-Fry

So good and so quick! Only changes I made were adding a squirt of spicy dijon to the sauce and adding some leftover cooked chicken breast to the mix! Served with jasmine rice. Super easy supper and tasted amazing!

Bolognese Sauce

This is just delicious. A bit of a pain in the butt, but totally worth it. I used to just "wing it" when making bolognese, but not anymore-- this will be my go-to recipe from now on! I made a couple changes based on what I had - didn't have any mushrooms so I substituted diced green and red bell pepper, and I also didn't have any ground pork so it was all beef. And it still turned out fabulous!! Next time I will fry my bacon alone first, as other reviewers suggested, so it can get nice and crispy -- I couldn't get it crisped up enough with such a large amount of finely minced onion (I made a double batch, so it was a LOT of onion!). Oh, and I agree with another reviewer in thinking that the recipe must mean to call for tomato paste, not sauce, as sauce is not available in 6oz. cans. I initially added just the equivalent amount of sauce, but it didn't look quite right (too watery) so I added 2 cans of paste to the doubled recipe and it thickened up perfectly!

Pork, Broccoli and Rice Casserole

YUM! Used fresh instead of frozen broccoli, and used about 1.5 times more than the recipe called for. Also added a red pepper, some garlic, onion, and paprika. Did not use mayo as I did not have any, but didn't miss it. Delicious comfort food.

Spicy Garlic Salmon

Loved it!! Very flavorful. I used an extra clove of garlic because we are garlic lovers! I also used 1tsp of red chile pepper flakes as I didn't have a whole dried pepper.

Pretty Chicken Marinade

Yummy!! This was so easy and delicious! And a bit different, too, which is always welcome. Didn`t have spicy brown mustard, so I used dijon. And I have to say I was a bit skeptical at first, but ended up LOVING the liquid smoke flavor!!

Delicious!!! Very moist. My husband said best burgers ever! I did add 2Tbsp dehydrated onion to the mix, and used crushed up saltines in place of bread crumbs, as I didn't have any on hand.

Cheesecake Bars

Made this as stated with two exceptions- I used light cream cheese and omitted the lemon (for no other reason than I didn't feel like having a lemon flavor that day!). I didn't find the filling sweet enough at all! It was quite sour and disappointing. And, as other reviewers stated, the filling is thin. I would have doubled it as suggested, but didn't have enough cream cheese on hand. The crust was delicious but a little bit crumbly, even after 24hrs in the fridge. I will, however, make this again because it was SO easy, and believe it can be delicious by implementing a few easy changes-- next time I will double the filling and increase the sugar by one and a half times, and make sure to use regular full fat cream cheese. For the crust I think I'll decrease the flour a bit- to 3/4c- and hopefully it will stick together better.
