Filipino Beef Stir-Fry

Made a few changes to this when we omitted the celery, onions & peppers. We also used more oyster sauce because let's be honest...IT IS SO GOOD. Oh My Stars...who knew it was this freaking good. My household prefers the recipe without meat which makes it all the more tastier. The vegetables always come out nice, tender yet still crisp. It's already on repeat here.

Lime Cilantro Rice

This dish was amazing. I am not a fan of cilantro but my Mexican husband loves it. It wasn't overpowering & the lime, wow, it brought out a flavor that I can't put into words other than, G double O D, good!

Slow-Cooked Chili

I made this chili with only one exception. As I don't like bell pepper, I used only 1/2. It was amazing! This chili was hearty yet not chalk full of beans. It went well with cornbread and basmati rice or all on it's own. My husband and daughters really enjoyed this meal. My oldest keeps asking me to make it again & I will.

Caramelized Chicken Wings

This is already on repeat and yesterday was the first day I cooked it. I followed the recipe but baked @375 for 40 mins covered and 40 mins uncovered. If I could give it more stars, I would. Sounds weird but SO GOOD!!!!!

Grilled Salmon Steaks with Savory Blueberry Sauce

Followed the recipe exactly and it was still too vinegary. Added a lot of sugar just to neutralize the vinegar taste. Next time, I will reduce the vinegar by at least half.

Chicken and Dumplings III

I used the advice from Reviewed on Feb. 9, 2004 by STELLAR7:Sauteed 1/8 c chopped onion and 1 lg. garlic clove (chopped) in 1 TBL butter before adding chicken. I used chicken tenderloin and covered it with 2 cans chicken broth. Did not drain any broth when chicken was done. Added 1 can cream of chicken, 1 can cream of mushroom and 1 can cream of celery soup and 1/2 box frozen peas and carrots. Plus 2 canned chipotle peppers chopped. My entire family RAVED about this and I have 2 picky eaters. It was gone before I could make some for my husband's lunch :-) This was very tasty.
