Libby's® Pumpkin Cranberry Bread

I love this recipe. I use spelt flour and 3/4 cup agave instead of white sugar to make it a little more healthier. I also omit the orange juice. The bread is very flavorful without the orange juice.

Almond Cookies II

I loved these cookies. I baked them for my personal Christmas treat. I did crunch up the rice cereal. I also used 1-4 cup of agave instead of brown sugar, I used lard instead of butter, "I cannot have dairy. I did not put chopped almonds in the mix, instead I pressed a toasted whole almond into each cooky. They were great!

Cranberry and Cilantro Quinoa Salad

Loved it. I used 1 whole red bell pepper, and celery instead of carrot, and fresh cranberries. I had to bowl the cranberries to soften them, only for about 3-5 minutes. I also roasted my own almonds, preheat oven 350 and bake for 8 minutes on a small cooky sheet. It was my family's favorite thing I made for thanksgiving.

Savory Slow Cooker Squash and Apple Dish

I loved this! I did not use cranberries and I added 1-1/2 ts of fresh chopped ginger, 1/4 ts ground cloves, and I used granny smith apples. I'm not use to sweet things and I thought it great, but my family who eat a lot of sugar were not crazy about it.

Breadless Stuffing

I thought it was great. I did not use mushrooms, but I did not miss them. I think next time I will add bellpipper. And I did not miss the bread taste.

Apples by the Fire

It was a great treat by the fire. I felt that the apple needed to cook just a little longer, about 20 minutes or so. But it is personal preference.

Beezie's Black Bean Soup

It was very good and it made a lot. I only used 1 16 ounce can of tomatoes. I do not like a lot of tomatoes and I felt that just 1 can was plenty.

Slow Cooker Apple-Scented Venison Roast

It was the best deer roast I have ever made. I used a Granny Smith apple and it made the deer sweet but tart. I will use this recipe again and again.

Delish Coconut Muffins

Once again I loved something my family did not. Everyone thought it needed more sugar. I did change some things. I used 3/4 cups rice milk because I did have any coconut milk. I also added 1/2 cup apple sauce and I only used 1 cup coconut flakes. I liked them though and will make them again just for myself.
