Salmon Cakes II
These were yummy! I made 8 patties instead of 4 (much easier to handle - used the ice cream scoop that I use for my muffins.) My 3 year old ate 2 of them, and commented on what a good cook I am:) I was so pleased to get salmon into my daughter - I will definitely be making these again. Just a few minor changes - I did not use any butter (yikes! 1/4 cup - they would be soo greasy) and I coated with a breadcrumb/parmesan mixture instead of flour.

Enchilada Casserole
Our family thought this was pretty bland and the enchilada sauce made it kind of bitter. (I really didn't like the flavour of the enchilada sauce - yuck!) Maybe it would be better with home made enchilada sauce. We liked the texture and will use the basic recipe and experiment with different spices and sauces in the future.

Breaded Rib Roast
Delicious! My roasts are usually a bit dry, but this kept it so moist and gave the roast great flavour. (A recently purchased meat thermometer really helped too!) My husband loved it. I will definitely make this again.
