Slow Cooker Beef Stroganoff I

This was so easy to do. I added sliced mushrooms about 20 minutes before serving and didn't need to add the cream cheese so it saved calories and fat. Made noodles and served it over the noodles. Will definitely make again and share the recipe with family and friends.

Strawberry Avocado Salad

I added some Kiwi to the salad. Next time I'd use a little less sugar, but the flavors were great and the eye appeal was definitely there.

Zucchini Cream Pie

This is great as a custard also. Just omit the pie crust. I decreased the sugar to 3/4 cups and found it to be sweet enough. Great way to use that leftover zucchini.

Irish Soda Bread III

This made a large loaf and there was none left after dinner. I used 3/4 cup of warmed milk and 3/4 cup of warm water rather than the dry milk powder. Melt the margarine or butter with the milk and add to the mixture.

Two-Bean and Mango Salad

I made this for a group of women. It was a big hit. Many went back for second and third helpings. I added some finely chopped celery and used a whole can of black beans and butter beans. Made it earlier so the flavors would have time to blend.

Roast Sticky Chicken-Rotisserie Style

This had a great flavor that went through the whole chicken. I used 1 roasting chicken instead of 2 small chickens. Made chicken salad with the leftover chicken and it disappeared. I also used the bones to make a chicken stock for soup.

Apple Walnut Stuffed Pork Roast

I used most of the ingredients for this dish, eliminating the bread crumbs and applesauce. Used more diced apple and fresh ginger. Before stuffing the roast, I sprinkled the inside with cracked peppercorns, then stuffed and tied it. Prior to adding to the pan, I roasted seasoned potato and carrots for about 1/2 hour. Then added the roast and cooked for about 1 hour at 350 degrees. It turned out moist and flavorful.

Crusty Potato Bread

I made this for my family and it disappeared. They liked the crusty exterior and soft interior. Used the bread machine on a manual setting and then let it rise on a cookie sheet. It made a nice round loaf.

Apricot Amaretto Chews

This cookie was excellent. It was hard to eat just one. I toasted the almonds before chopping and adding to the recipe. Also used almond flavoring instead of amaretto. They disappeared. Will definitely be making again.

Lentil Loaf

Use the lentils instead of ground beef in this "meatloaf", it's excellent. I make the mixture then put half in the pan, layer cheese and tomato on that, layer the rest of the mixture and put cheese and ketchup on the top.
