Curried Hash Browns

This recipe is fantastic! I used frozen hasbrowns from the freezer and defrosted them in the microwave before cooking. So easy and so delicious!!

Chicken Tortilla Soup

I used leftover chicken from the Spicy Crockpot Chicken recipe also on this website. I had so much leftover chicken that I ended up doubling the recipe. I also squeezed a whole lime into the pot and added 8 oz of velveeta to give the soup a little bit of a creamy taste. Not so sure if the lime juice made a difference or not. So I may not do that again. I also pureed both cans of tomatoes in my food processor to thicken the soup a bit. The finished product was fantastic and even better when I threw in some fresh cilantro (in my individual bowl) for that added zing.

Slow Cooker Spicy Chicken

I added a pic of my version. I was short on time so I cooked mine in the pressure cooker. I also doubled the recipe and browned six fat chicken breasts and one finely chopped small onion in oil in my pressure cooker. Then I added all the other ingredients and cooked in the pressure cooker for 12 minutes. I didn't have any chili pepper on hand, so I eyeballed the ground cumin and curry. I actually think it was better that way. Once the pressure cooker released the steam on its own accord and I shredded the chicken, I poured some of the juices in the pot over the shredded chicken. I also added fresh cilantro as you can see in the picture. My kids LOVED it and it was completely healthy!!

Kentucky Butter Cake

My whole family and even the neighbor kids loved this cake!! The only thing I will do differently next time is check the cake at 45 mins. Sixty minutes was too long in my oven. The cake was crumbly, but otherwise this recipe is a keeper!
