Texas Caviar with Avocado

I love this and I HATE black-eyed peas! The only change I made was the addition of a few cloves of finely minced garlic. I really hate black-eyed peas! As a Southerner, I feel compelled to eat them on New Year's Day for luck and have long sought a recipe that made the dreaded peas somewhat palatable. I made a second batch of this a few days after New Year's Day (the first was long gone!) and I ate it as a salad. YUM! Black-eyed peas aren't just for New Year's anymore!

Colleen's Slow Cooker Jambalaya

I read the other reviews and decided to keep it "soupy" so I could cook the rice with the jambalaya. Cooking the rice along with the jambalaya absorbed the juice and imparted a nice flavor to the rice. I substituted 12 oz beer for the broth (I used lager style, but pilsner would work and impart a little less flavor). I think the slight beer flavor enhances the spices nicely. I also left out the bell pepper as I am not fond of the texture when they cook in the slow cooker (the flesh softens, but the waxy skin does not and I was too lazy to peel them). I also used turkey keilbasa instead of andouille to cut the fat a little.

Chicken Breasts with Olives

Very good! My family loved it. I did make a few substitutions. I used olive oil instead of butter. I did not have tarragon so I used thyme. I used 3T bottled lemon juice. The pan juices looked so good after baking that I sauteed cooked pasta in them until the liquid evaporated (about 5 minutes) and I am glad I did!

Creamy Beef Stroganoff

I have been looking for a recipe like my mother made, which was a childhood favorite. This came pretty close, but was a little bland. The second time I made it, I made the following changes: -cook 1/2 onion, diced, with the beef -add 1 teaspoon paprika and 1/2 teaspoon garlic powder when adding the soup and consomme -add 1/4 cup sherry when adding the sour cream (I used fat free) We liked it much better this way.

Rich and Simple French Onion Soup

I prepared it as directed and I thought that the broth was a little flat. I added 1/3 cup of red wine, 1T worcestershire sauce, and 1T balsamic vinegar as directed in another recipe. I really liked it with these additions.

Chef John's Pineapple Upside-Down Cake

DRY!!!!! This was not the gooey, buttery cake I love and remember from childhood. The topping was delicious, but the cake was dry, crumbly, and had very little pineapple (or any other) flavor. I have lost my mother's recipe and will have to keep experimenting; this is not it.
