Healthier Apple Crisp II

Classic Bran Muffins

Great starter recipe for a variety of bran muffins. I used All Bran cereal and oat flour and added craisins and almonds to one batch and walnuts to another. I found that adding a little (approx 1 TBSP) coconut oil make the muffins less dry. I froze what we didn't eat and have been taking them out and microwaving them for breakfasts. Works great! Thanks for the recipe.

Triple the Ginger Cookies

Fantastic cookie! I made these for my sister while she was going through chemo to help with the nausea. Now, I am a giner-holic, but even friends and family who are not loved these soft, delicious cookies. Definitely recommend these!

Roast Beef Tenderloin

Wow! This was amazing!! Absolutely as good as you would get in a 5-star restaurant. I followed the directions exactly. Had to go to a couple of grocery stores to find veal stock and tarragon vinegar, but I think using all the recommended ingredients was key. This was our Christmas dinner this year and everyone raved. Can't thank you enough!

Rosemary Roasted Butternut Squash

My husband and I absolutely loved this recipe! I bought the butternut squash cubes at Costco and used dried chopped rosemary and the minced garlic from a jar and roasted it all at 425 and it only took about 25 minutes. Delicious and easy!!

Slow Cooker Enchiladas

Great dish. I followed the suggestions of others and added drained and rinsed black beans and cilantro and used only 2 cups of cheese. I also baked it in the oven on 350F for 40 minutes. Everyone gobbled it up!

Double Layer Pumpkin Cheesecake

This was a favorite at Thanksgiving. I did follow another reviewer's advise and added pumpkin pie filling, an extra cream cheese, sour cream, spiced rum, and extra spices. I am going to make it again and make my own crust with graham cracker crumbs and cashews (really good crust). I also drizzled melted butterscotch chips over the pie and that really added a fabulous punch.

Flambeed Vanilla-Poached Pears with Apricot Sauce

Apple Crisp II

Delicious! I did make some changes to fit in with my diet such as I used almond flour in place of the flour and I used Stevia in place of the sugar (just used about 6 TBSP, but I also made the recipe for only 6 people). I also added some Craisins and nutmeg, doubled the "crisp" portion, and cut the water in half like others recommended. Turned out great!

BBQ Pork for Sandwiches

I took other reviewer's suggestions and cooked a pork butt with no liquid on high for 4-5 hours, shredded it, drained the crock pot, and put it back in for an hour with some Bulls Eye bar-b-q sauce. I've made it twice and everyone raves. Can't believe how easy this is and how delicious!

Downeast Maine Pumpkin Bread

I followed the suggestion of others and substituted 1/2 the oil with applesauce (but kept the sugar the same since the applesauce was unsweetened), added 1/4 tsp of pumpkin pie spice and it turned out fabulous. Made mini muffins as well as the loaf of bread and cooked them about 12 minutes.

Eggnog Cheesecake III

BEST CHEESECAKE EVER! The cooking time/temp makes this cheesecake amazing. I made my crust with crushed cashews and graham crackers and added some nutmeg and cinnamon. Just spectacular!

Marinated Pork Tenderloin

Fabulous! Made it as per recipe and it was perfect. I saved the marinade and boiled it on the stove to place over the top. Everyone, even very picky kids, loved this. Absolutely a keeper!

Slow Cooker Pulled Pork

This is a great recipe. I used Fitz's Root Beer, which I highly recommend because it uses real sugar, and because - it is from St. Louis!! I added salt, pepper, garlic powder and the root beer and after the pork tenderloin was done cooking I shredded it, added Sweet Baby Ray's and put it back in for an hour. Hubby LOVED it, as did the people at the party I was hosting. I had lots of requests for the recipe! I combined it with the top rated homemade coleslaw from Allrecipes and it was so good! BTW - I add Stevia instead of sugar (1/2 the amount called for) in the coleslaw recipe.

Sweet Restaurant Slaw

Really good slaw, just a little too sweet. I used Truvia sugar substitute and only used 1/2 of what was called for, but will cut down on the sugar next time. I also used mayo made with olive oil and used olive oil in place of the vegetable oil, which was fine. Great flavor overall!
