Slow Cooker Chicken Taco Soup

Very similar to the Weight Watchers recipe that uses ground turkey and ranch dressing mix. We add some chipotle hot sauce to liven it up a bit. I made it with less green chilis so my kids would eat it. They loved it with chips and cheese (yea!). Very easy to put in the crock pot and have ready for a quick meal when you are on the go!

Sweet Restaurant Slaw

Really good slaw, just a little too sweet. I used Truvia sugar substitute and only used 1/2 of what was called for, but will cut down on the sugar next time. I also used mayo made with olive oil and used olive oil in place of the vegetable oil, which was fine. Great flavor overall!

Apple Crisp II

Delicious! I did make some changes to fit in with my diet such as I used almond flour in place of the flour and I used Stevia in place of the sugar (just used about 6 TBSP, but I also made the recipe for only 6 people). I also added some Craisins and nutmeg, doubled the "crisp" portion, and cut the water in half like others recommended. Turned out great!

BBQ Pork for Sandwiches

I took other reviewer's suggestions and cooked a pork butt with no liquid on high for 4-5 hours, shredded it, drained the crock pot, and put it back in for an hour with some Bulls Eye bar-b-q sauce. I've made it twice and everyone raves. Can't believe how easy this is and how delicious!

Downeast Maine Pumpkin Bread

I followed the suggestion of others and substituted 1/2 the oil with applesauce (but kept the sugar the same since the applesauce was unsweetened), added 1/4 tsp of pumpkin pie spice and it turned out fabulous. Made mini muffins as well as the loaf of bread and cooked them about 12 minutes.

Chocolate Mint Cookies I

Great cookie! I used the mint truffle Hershey's Kisses and it was amazing. Tried peanut butter cups, but didn't like that as well. Mint definitely does the trick. Will certainly make again.

Big Soft Ginger Cookies

I used the suggestion of others by using 1/2 regular and 1/2 powdered sugar. Wish I had coated the cookies in powdered sugar as well. White sugar too crunchy, and it needs a little more sweet - no coating (which I tried) is not quite sweet enough. Flavors and texture very good though.

Eggnog Cheesecake III

BEST CHEESECAKE EVER! The cooking time/temp makes this cheesecake amazing. I made my crust with crushed cashews and graham crackers and added some nutmeg and cinnamon. Just spectacular!

Buttermilk Pancakes II

Best pancakes I've ever made. Husband, who does not generally like pancakes, loved them. Nephew now asked for them every time he visits and my own kids request them all the time (don't make them as much as they ask!). They are a little time consuming, but totally worth it. Recommend making lots and freezing them to microwave later when everyone wants more!

Classic Bran Muffins

Great starter recipe for a variety of bran muffins. I used All Bran cereal and oat flour and added craisins and almonds to one batch and walnuts to another. I found that adding a little (approx 1 TBSP) coconut oil make the muffins less dry. I froze what we didn't eat and have been taking them out and microwaving them for breakfasts. Works great! Thanks for the recipe.

Double Layer Pumpkin Cheesecake

This was a favorite at Thanksgiving. I did follow another reviewer's advise and added pumpkin pie filling, an extra cream cheese, sour cream, spiced rum, and extra spices. I am going to make it again and make my own crust with graham cracker crumbs and cashews (really good crust). I also drizzled melted butterscotch chips over the pie and that really added a fabulous punch.

Easy Slow Cooker French Dip

Everyone in my family LOVED this recipe. Took advise from others and added Worcestershire and Kitchen Bouquet (approx 2 TBSP) during cooking then cut up meat and put back in pot along with a sliced red onion and mushrooms about 45 minutes prior to serving. Served on rolls with cheese after toasting in toaster oven. Rave reviews!
