Carrot Raisin Bread or Rolls

I'll be honest, I'm not sure exactly what the carrots added. Maybe a little extra sweetness from the natural sugars?... At any rate, the bread is lovely. I only gave it the one rise as a whole lump of dough before separating it into the loaf tins, and it worked fine. I also substituted 3 cups of whole wheat flour for the white. Lovely fragrant bread was the result, with great texture. I highly recommend this recipe to anyone as it is easy to make and produces excellent results. One thing... the instructions skip the step where you add the liquid mixture to the dry ingredients! Not that hard to figure out, but just a wee glitch I noticed.

Egg-Free Low-Fat Oatmeal Cookies

What a let-down! The batter was so tasty, but the final result is rubbery and kind of glutinous without really having much in the way of flavour. I could swear these things would bounce... If I didn't have an aversion to wasting food I would just pitch them, but they are edible. My advice: make regular cookies & replace half the butter w/applesauce, or just make them smaller & eat slowly.

Sioux Indian Pudding

Wow. A nice thing to whip up; it's unbelieveably easy to make, and is a lovely textured treat. I only had demerara sugar, so there was a STRONG molasses taste, but I liked that. My boyfriend said he would give it a miss, and the next time I looked, he'd taken two pieces, one after another! Gues he liked it too... ;) You could probably substitute honey for the molasses if you don't like such a strong flavour. I'll give that a go next time & report back...

Easy Corn Chowder II

A great soup. Easy as anything to make, you can modify the spices as you see fit, and the consistency is super. A meal in a bowl! I made this for my father, who loved it, and my boyfriend, who ate 2&1/2 bowls (somewhere around half the pot!) Great the next day, too.

Easy Hummus

Great recipe, I highly recommend it; super easy to make. Didn't have jalapeno or cumin, so I left out the peppers & added curry powder instead. I played around with the amounts of bean juice & lemon juice (added a bit more to make it smoother) and added a teaspoon of olive oil. Be warned, 3 cloves of garlic makes a SUPER-GARLICKY hummous. Vary as needed! I'm never buying hummous again!
