Cherry Poppyseed Twinks
Just made these yesterday...the texture is really nice, and I really like the poppyseeds too. I used redcurrant preserve, as that was what I had on hand. This was my first go at a thumbprintcookie, so I had a bit of trouble with indent/jam ratio. Some cookies had jam overload, and it sort of bubbled down one side. No problem, really, as I was decorating some other cookies with white chocolate glaze. Took out the whisk, and drizzled, criss-cross, over the top of the whole batch. Hid the flaws, and it looked great.Will definetley make these again!

Whipped Shortbread Cookies
These are ok. I had to reduce the baking time by 5 minutes, and I did leave out the cherries, as I don't like them at all. I will try adding some flavouring, or skor bits. For me,they are a bit too plain otherwise.I don't think that they would turn out piped or put through a press---mine flattened to a very thin cookie while baking, so I don't think that they would hold a shape very well.

The Best Lemon Bars
Yummy and easy! Thank you to the reviewers: added a bit of salt to the crust, added zest to the filling (used 3 lemons, as mine weren't too juicy), and followed the suggestion of sprinkling fresh blueberries in/on the filling. They were an amazing hot weather desert. Perfect, because not only was it very hot, but we had to travel by car for an hour (no A/C in car!) to get to the party, and I was worried about baking something that would not travel well. These were perfect.Sifted some icing sugar overtop,...and ate lots!They have also kept well. Still OK, after two days in the fridge...
