Marshmallow Fondant
I love this recipe! I will note that it is not a good idea to use a regular hand mixer for this recipe. As soon as I started to blend the marshmallows and water my hand mixer sucked it right up inside of it. Even at the lowest speed. I opted to grease my hands up with Crisco and mixed the sugar in the marshmallow by hands. It is time consuming but it's way better than the butter-cream recipe and not greasy at all. It tastes much better too! It's a lighter recipe for fondant and pairs better with the cake and frosting. Will definitely use again.

Key Lime Pie VII
This pie is not what at all what I expected it to be. I had never made a key lime pie and thought this would be a simple way to start. BOY, was I disappointed! This recipe creates a pudding like pie. I like my key lime with a little more cheesecake consistency. At first taste all you can taste is the condensed milk. Then you have an after taste of lime. If it weren't for my own graham cracker crust I would have probably trashed the entire thing. I have to scrape most of the pie filling off in order to even eat it. I think I will try a recipe that calls for eggs in it next time.

Rolled Buttercream Fondant
Great recipe. This was my first time ever making fondant and it turned out great. I followed the recipe exactly. The only thing I can suggest is have patience with the fondant. Trying to rush and move quickly can lead to cracks and tears. Be patient and creative and you'll come out with something beautiful.
