Baked Onion Dip I

I made this for a "couples" shower. Everyone loved this. I served it with crackers. I chopped the onions in medium-sized bits (as was recommended in another review). This recipe is very quick and easy to make. I definitely plan to use this recipe again!

Antipasto Pasta Salad

This salad is wonderful. I made only one change to the recipe (I omitted the pepperoni and add a little extra sausage). It was a hit at the party I served it at, and several people asked me for the recipe. It also looks very colorful, so it presents really well.

Six Can Chicken Tortilla Soup

Made this recipe as stated, more or less. I used low sodium chicken broth and added a dash of cumin. I served it with fried tortilla chips, sliced avocados and fresh cilantro on top. It was terrific! My husband loved it! So quick and easy. Next time, I will experiment with grilled chicken, just for kicks.

Baked Ziti I

I made this, but took the advice of others and used 1/2 sour cream (light) and 1/2 ricotta cheese. My husband and daughter loved it -- I thought it was pretty good, but not my favorite. It was a bit too bland for me, and I got a little tired of the sour cream taste (strange, since I love sour cream!). Next time I think I'll make it with a spicier sauce and use a little less of the sour cream/cheese mixture. It, also, made a lot -- 9x13 baking dish was filled!

Tasty Orange Chops

Made this recipe using a pork tenderloin. I marinaded it for 8 hours, piercing the meat several times and turning it after 4 hours. My family really enjoyed it and said they would like to have it again. Husband would have liked a bit of the marinade served with it though. Next time, I will save some back and cook it down to serve along with the meat.

Busy Night Turkey Taco Soup with Avocado Cream

I made this using our leftover turkey. It’s a great recipe as is, but I did make a few changes. I added garlic salt, replaced the chili beans with black beans as others did, and added a little extra bit of roasted turkey paste. I served it with a little bit of crushed corn tortilla chips, chopped avocado, chopped cilantro, a little bit of sour cream and a sprinkling of crumbed Queso Fresco (Mexican cheese) on top. Everyone loved it. The soup actually tasted BETTER the next day – more like a “cooked all day” flavor. I will definitely make this again! Thanks for the great recipe for leftover turkey!

Zippy Shepherd's Pie

This recipe was very nice. Diffently goes into my "comfort food" list. The only thing I did different from the recipe was to use roasted garlic, instead of fresh garlic and added some corn. My family LOVED it -- well, my 13 year old boy gave it a three, but the others rated it a "5". Really nice favor combo!

Chilled Tomato and Avocado Soup

Made this recipe using half the amount of onion and green pepper the recipe called for (as per other comments). I really hoped to like this since it is so healthy, but found it just "okay". It seemed to acidic for both my husband and me -- I was just a little disappointed.

Salsa Chicken

Wow...who knew easy, could be so good! The family loved it. I made it just as the recipe states - I pounded the chicken breast to make the uniform first though. Served with Cilantro Lime Rice on the side. Great recipe! This is a great recipe for kids to make, too. It's simple, but tastes really good.

Oaxacan Tacos

Great tacos! I wasn't sure they would have enough favor with the limited seasoning, but I made them as stated in the recipe and they were excellent. Very fresh tasting, light, very nice. I did blot the tortillas after I fried them to remove any excess oil. I also sprayed a couple with Pam and then fried them to cut down on calories -- not too bad. The amazing thing -- all three kids and my husband loved them! Nice job!
