Chef John's Shrimp Etouffee
I doubled everything except broth(used 3 cups) because I have five people to feed. This wonderful dish was a huge hit with the family! I also used chicken instead of shrimp, since (like Chef John) I'm not a huge fan. The video was very helpful & the dish turned out perfectly!

Amazing Chicken
So easy & moist! I read other reviews & added some more spices( Mexene chili powder, garlic powder, salt & pepper). I also mixed mayo with a little dijon mustard-yum! Just use a thin layer of the mayonnaise/mixture-otherwise it becomes too mushy. This recipe is so easy, you can make it with mexican spices, italian, etc... It has become a favorite of the family!

Pumpkin Sheet Cake
I just made this-so moist!!! I did add 1 tsp of all spice, as well as the cinnamon, for a true pumpkin pie flavor. For the icing, I used 8 oz cream cheese instead of 3-it was too sweet otherwise. Also, I cooked it for 40 minutes; it would have been undercooked if I hadn't. This was inhaled by my family!
