Southwestern Egg Rolls

These were great. We used egg roll wrappers instead of tortillas, brushed them with olive oil and baked for 10 minutes at 450 degrees. Also, for dipping sauce, we mixed sour cream, avocado and garlic. Will definitely make again!

Herbed Lentils and Rice

For those that don't have 2 hours and need a quick side, I used this base recipe and changed it to stove top. I slow cooked my onions for about 15 minutes. I then added fresh chopped garlic, seasonings (with the addition of red pepper flakes) and the white wine for a few minutes until it cooked down. I then reduced the liquid to one cup for the half cup of quinoa i added. throw it all in, put the lid on and simmer until liquid is almost gone, about 12 minutes. I then added canned lentils and cooked out a bit more liquid. When the liquid is all cooked off, I topped with cheddar cheese until melted. This was great, quick, easy, and nutritious. I will try the slower baked recipe with brown rice, but with a quicker cooking (and higher protein) quinoa, its just a bit easier for a last minute addition to a meal.

Creamy Saffron Shrimp with Gnocchi and Caramelized Onion

Mmmm, amazing. I made homemade gnocchi off of the Gnocchi I recipe. added a little less paprika and a little extra saffron. Oh so good. I almost wanted something crunchy in the recipe. Do not skimp on the parmesean cheese though, the saltiness makes the dish!

Gnocchi I

So easy, I abided by the other reviewers pound per cup of flour. I had a little less than two pounds of potato and used 1 1/2 cup flour. Great in the Safron Shrimp and Gnocchi recipe!

Peanut Butter and Bran Cookies

First off, I changed a handful of ingredients. Instead of the butter I substituted applesauce (cut down on the greasiness of the other reviews), cut the white sugar in half, used whole wheat flour, as well as wheat germ instead of bran( Its all I had on hand). they are really good, could be even better with some chocolate chips or by doubling the peanut butter. No need for the extra oils in the butter when the peanut butter holds all the oils you need. delicious.

Stuffed Guinea Squash (Eggplant)

This was a great, easy, healthy dish. We added Kale for a little saltiness and red pepper for a little sweetness, garlic, some classic warm spices (coriander, cumin, paprika, curry powder, dash of nutmeg) and used enoki and shiitake mushrooms satueed in olive oil. We used the suggestion and once the eggplant was pitted out, i made shallow slices in the remaining flesh, lightly brushed with olive oil, and threw it in the oven while the rest of the vegetables cooked. We substituted Wheat Germ for the bread crumbs and with the added spices, we cut the cheese in half and didnt miss a thing. Definite addition into the recipe box.

Wheat Germ Whole-Wheat Buttermilk Pancakes

These were wonderful... we also ground up a 1/4 cup flax seed to add a little bit more nuttiness, as well as spiced oats, a dash of nutmeg, cinnamon, and a splash of vanilla. Butter on the pan gave these a wonderful crust on the outside. One of the top recipes in our pancake repitoire!

Tom Ka Gai (Coconut Chicken Soup)

This was absolutely amazing and simple. I even had to substitute powdered ginger for regular and it was great. I coated the chicken in flour and pan seared them so that they woud retain their moisture and tenderness, also used a can of light coconut milk and reduced the cilantro by half.
