Roasted Beet, Peach and Goat Cheese Salad

Delicious. Definitely going in our recipe book. Roasted beets for an hour in water at a slightly lower temperature.

Spring Vegetable Soup

This was delicious and a great way to use up some vegetables. We nixed the potato and added extra egg noodles. We also used chickpeas as well as black eyed peas.

Curried Coconut Chicken

Good recipe for leftover coconut milk, plus i just diced up a leftover can of whole peeled tomatoes, no tomato sauce necessary (though a dash of tomato paste could make up for the missing tomato flavor). Quick and easy.

Gourmet Mushroom Risotto

Garlicky Quinoa and Garbanzo Bean Salad

I decided to make this into a hot entree. I used 4 garlic cloves, half an onion, sauteed them up and threw in steamed broccoli and red peppers with the quinoa and chickpeas. The tarragon, lemon juice and dijon mustard complemented the entire dish beautifully. Will make again.

We cooked this down in the slow cooker with a can of tomatoes with green chilis. I drained the liquid towards the end into a pan, skimmed some of the fat and added flour to thicken the sauce. Served over rice.

Middle Eastern Rice with Black Beans and Chickpeas

This was a great quick recipe, we had everything on hand. I added some onion, and threw some flax seed in instead of pine nuts for a crunch. I would try this with lean spicy turkey sausage as well.

Sweet Potato Pound Cake

Now when I saw the orange glaze, i knew i had to have cardamom in this recipe! I cut the cinnamon down to 1/4 tsp, nixed the nutmeg, and added 1 1/4 tsp ground cardamom (next time, I think I will add even more). I went with the cake flour suggestion as well as reducing the sugar to 1 1/4 cup (this is only if you don't enjoy really sweet cakes; i prefer enjoying the flavors of the spices and sweet potato).I also reduced just two tablespoons of confectioners sugar down with the orange zest and juice on the stove, and using a mixture of water, lemon juice and cornstarch to thicken it up to glaze consistency; it gives it a really nice tart flavor that compliments the cake very well.

Married this and the Blissful Rosemary chicken recipe (i adore rosemary, which i added chopped to the mushroom mixture). Also while i was sauteing the mushrooms, i thinly sliced about 3 garlic cloves into that as well; it ampted up the flavor of the sauce quite a bit. Wonderful recipe, i cut down on the butter... too much for my taste for everyday dinners. Will definitely make again

Great sweet bread. On the same feel as banana bread or pumpkin bread, would make great muffins. next time I am going to try to half the sugar to see if i can get it to have a more savory flavor
