Beef Enchiladas II

The meat is very bland. It needs something to give it some flavor. I added some Adobo seasoning and cumin and that didn't even help. The only thing adding flavor is the cheese and sauce. I was very disappointed.

Refried Beans Without the Refry

The consistency was good but I did not like the flavor. I'm not sure what restaurants people are talking about but these do not taste authentic. My husband is mexican and he did not like these at all. I will not make again.

Slow-Cooked Flank Steak

WOW... this was really easy and really tasty. My husband and kids loved it. I only cooked 6 hours and it was perfect. We like our meat well done. Only change I made was to use a chopped jalapeno in place of can of chiles as I did not have them. Will definitely make again.

One Bowl Rice

This was really good and really easy. I added more vegetables and lowered the oil to 1/3 cup. Will probably lower to 1/4 next time. Used Canola for health benefits. I served this with chicken breasts marinated in teriyaki sauce. Will definitely make again.

Green Chili Burritos

WOW... great, easy and tasty. My husband is Mexican and loved it (though will make spicier next time). Very much like a good restaurant version of the burritos. Only change I made was to use a chuck roast since that is what I had.

Cabbage Beef Soup

This soup was very good. I did make some changes though. I did not use cumin because I didn't want a chili taste. I used 28 oz diced tomatoes and 8 oz tomato sauce. Also added 2 cups cooked rice I had on hand and it reminded me of a stuffed cabbage soup. Very good, very filling, reminded me of my Mom's stuffed cabbage without all the work.

Fettuccini with Mushroom, Ham and Rose Sauce

I have made this with left over grilled chicken as well as ham and my family always loves it. Very easy and the taste is comparable to what I find in italian restaurants. Love it!

Pork Tenderloin with Tomato and Pepper Sauce

Excellent, easy, very flavorful. I'm doing south beach diet and it fits the bill. I used canola oil instead of butter and used some red and green peppers. Served on top of whole wheat angel hair pasta. My kids even ate it. This would probably work well in the crock pot too. Maybe next time I'll try it there.

Banana Muffins II
