Sesame Chicken Pasta Salad

I cut the oil in half, added about a teaspoon of sesame oil and, just to lighten up the pasta salad a bit more, I used agave sweetener instead of regular sugar . I also added cubed cucumber, grape tomatoes (cut in half) and cooked shrimps. The salad came out delicious and so simple to make! Enjoy!

Almost No Fat Banana Bread

I Love this Recipe! Out of all the healthy/low fat banana breads I've made over the years, this one turned out the tastiest! I substituted Splenda Brown Sugar (1/2 cup), Whole Wheat Flour, added 1/4 cup of walnuts & 1/4 cups of ground flax seed to make it lower in sugar, higher in fiber & good fats. This makes a balanced low-fat healthy banana bread for the whole family! Yum. Happy Cooking!

Sunny Pepper Parmesan Rice with Spinach

What a pleasant surprise! The idea of vinaigrette & parmesan cheese mixed in with hot veggie and rice sounded like a very "strange idea" to me. But, this actually turned out really tasty. I used just one cup of uncooked brown rice to start with and bumped up on the veggie (i.e., more spinach, onions & 3 whole peppers). This is an easy, nutritious and delicious side dish to make! It is even really awesome for toddlers! My 17 month daughter loved it! Enjoy.

Split Pea Soup

What a great Split Pea Soup recipe! It is lower in sodium with no additional fat added. It's as easy as chop, drop and simmer! I made this because I had leftovers from a giant spiral ham my husband and I had enjoyed. We have so much leftovers that I started looking for ways to do other things with it. What I've done differently was I dropped all the veggies in when the ham bone in the soup begin boiling, and before I begin letting it simmer. This was because I wanted the veggies to help sweeten the soup as well as making the veggies tender enough to feed my 16 months old daughter. And, she loved it! This is, by all means, not an OUT OF THIS WORLD soup. But it sure is good and it is healthy! I will make this again and again. Enjoy!!!

Healthy Banana Cookies

Being a health nut, I got very excited about making these cookies due to raving reviews. I really wanted to like these cookies but, they were just not as good as I wanted them to be. Don't get me wrong, they are not bad tasting, they're just not what I consider a chewy cookie would taste. These are, however, a great alternative for dieters, healthy eaters and infant/toddlers. To my surprise, my 16 months old daughter who does not like cookies too much, loved them! I will definitely make these again but, know what you are making, don't expect these to be of a cookie-cookie in which people are commonly used to.
