Joe's General Tso's Chicken

Absolutely loved this recipe. While it is time consuming, I took the advice of doing the chicken earlier in the afternoon. I used white wine instead of rice wine. I also took the advice to make extra sauce and doubled that part of the recipe - next time I will triple or quadruple it!! I wasn't familiar with the kind of hot peppers used, so I put 1 1/2 Tbsps. of crushed chili into the doubled sauce and it, for us, was the perfect heat. I put one red bell pepper and 2 ribs of celery in, to add some vegetables, and finished with 4 chopped green onions and 1/2 cup of white sesame seeds. This will be made again, and again, and....

Beef Egg Rolls

Absolutely yummy. I used a small strip sirlion steak I had left, sliced it very thinly and then again. I used packaged cole slaw, as suggested. Bought wrappers which were huge, deep fried them in a deep fry pan, 4 inches or so. The beef was pre-cooked but not the cole slaw - I think that is key. I used white wine instead of sherry. This is going in my recipe box!!! And will be shared and used again. Thanks to HERCATE.

Salsa Chicken Meatloaf

Hands-down one of the best meatloaf recipes I have tried. Easy to make. I didn't have ground pork, but used hot Italian Sausage taken out of the casing - yum. Even with the jalapeno, not hot - I might put more in next time!!

Best Brownies

These are the best brownies ever. Period. Not sure how anyone got cakey squares with this recipe. I am the laziest cook ever - I throw everything into my cuisinart and whirl it together - no, I do not melt the butter. I usually make the icing first, so I don't have to wash it before I make the brownies - doesn't work the other way round. I use parchment paper to line the pan - did I mention I was lazy?

Butter Tart Squares

Absolutely awesome. Moist, chewy, everything you want either in a square or a tart! I only had 1/2 cup of raisins, and that was lots. I can't imagine a full cup.
