Homemade Chewy Granola Bars

I've been trying out recipes for portable breakfasts for my husband, and these are pretty amazing! Surprisingly sweet, too. My alternates: natural sugar-free peanut butter instead of regular, honey instead of corn syrup (ew + bad for your health), no vanilla as I had none on hand, and instead of seeds, added peanuts. I baked them for 18 minutes, and cooled them; however, they weren't firm enough and many in the middle of the pan fell apart, so I'll try baking them and cooling them longer. But for flavour, these are fantastic.

This is pretty awesome, and very fast to put together. I didn't have any clams, mussels or crabmeat, which I am sure would have made the dish more flavourful. I just subbed with more cod, shrimp and scallops. My husband loved this.

Meatball Cookies

Meh, these were just ok. The dough was slightly tough to work with, and the recipe calls for way too much glaze - half will do. I thought I'd be making 30 larger cookies, given the "serving size" but in fact wound up with about 65 cookies. Like someone else said, you'd expect a sweet cookie judging by how they look, but they're not. Flavour was nothing to write home about- the spices and chocolate surprisingly didn't complement one another. I don't know, maybe I'll bring these over to an Italian friend to see if they like them! I'm hoping these are a nice pairing with a good coffee. They DO look super cute, though. Thanks for the recipe!

Couscous Royale

This was a huge hit at a dinner party- everyone had seconds! This also made way more than 6 servings- more like 10 generous ones. I also found I had enough broth in the meat and vegetable mixture to prepare the couscous. I simply threw in the 2 cups of couscous directly into the pot after it was done cooking, waited 5 minutes, and gave it a stir (I used medium sized couscous). We also found it wasn't as spicy as we would have liked, so we simply mixed a teaspoon or so of harissa with some chicken broth, and poured it over the meal. It was fabulous. Thank you for such a wonderful recipe!

Roasted Red Pepper Chicken

This was just great, even when I made the mistake of buying marinated red peppers instead of roasted ones. The sauce on its own isn't anything to write home about, but it is heavenly on top of this chicken! I sliced through each chicken breast, stuffed it, and then tied it up- I found I was able to get more stuffing into the chicken this way. I served it with some roasted red potatoes and root vegetables. Would definitely make again!

Easy Batter Fruit Cobbler

Considering how fast and effortless this recipe was, giant payoff in flavour. I added an extra half cup of fruit (I made a mix of peach and raspberry), and otherwise kept the recipe as is. Served with vanilla ice cream. Our dinner guests loved it and my mother in law asked for the recipe! :-D

Jo-Ann's Power Bars

As many others did, I used what I had on hand for the flavour, increased the amount of oats and had to omit the Grape Nuts since they are impossible to find in my area. I used dried cranberries, chocolate chips, and slivered almonds as well, and increased the applesauce by a bit to make a chewier bar. I also doubled the recipe and used a 9x13 pan- and these made 16 standard-sized bars. The flavour? I don't see kids loving them, since they aren't as sweet as boxed granola bars. Might be a bit bland to some. To us, it reminds us just how much sugar the boxed kind must contain, and it makes us shudder! Great as breakfast-on-the-go. Will make again! Thanks for the recipe.

Baked Brunch Omelet

Not a bad recipe, just didn't work out as well as I would have liked on its own. I took the advice of other reviewers and used only 1 cup of milk, and didn't use the pan of water. Worked out nicely. Found the ham I used made the dish a little too salty. I think with some tweaks this could be fantastic!

Veronica's Apple Pancakes

excellent and so easy! My husband does the following: he slices a tart apple, like granny smith or spartan, very thin, and then dips the apple slices in the batter. Nice if you're not feeling like grating the apple!

Beef Stew VI

This was quite tasty! I, too, browned the beef coated in flour and garlic powder, added a dash of Worcestershire sauce, omitted the corn starch, added a potato and some mushrooms, and then used the slow cooker, high for 4 hours. It was delicious with tender meat, and we dipped home-baked bread into the sauce. Fantastic recipe.

Easy Greek Skillet Dinner

Meh, it was good, edible, and all that, but it wasn't anything *special*. The only change I made was using whole wheat elbow pasta. It's a good basic meal, and I'm sure kids would love it, and it's great for when you don't have much going on in the pantry and want something quick and hearty.

Buttermilk Pancakes I

Amazing, fluffy, light pancakes that are SO easy to make. We followed the recipe exactly, and mix the dry ingredients in advance, so that we just pull out a container of the dry, mix with the liquids in a blender, and stir in fresh blueberries. HUGE rave from me- these never stick around for long at the brunch table!

Nutty Goat Cheese Bites

This was all right, simple, and it tasted great, but it's not going to impress guests. But I think it makes a great healthful snack served with whole wheat baguette. Would make it again when in a pinch.

Apple Pie Muffins

We really liked these. I had to only substitute regular white flour with whole wheat flour, as it's what I had on hand, and added an extra 1/2 cup of apples. Delicious and not too sweet. Perfect for Sunday brunch!

Toasted Pumpkin Seeds with Sugar and Spice

tasty, quick little Halloween snack! I had some leftover sugar and spice pre-mixted from making an apple dessert, and just used this. When the mix hit the seeds in the hot pan, the house smelled wonderful. We aren't huge fans of pumpkin seeds, but love carving Jack O' Lanterns, and this was our favourite recipe yet!

Pad Thai

We really liked this recipe! It's not the same as in our local take-out restaurants, but we like that. I added an onion, 2 garlic cloves as per someone's suggestion, and replaced the bean sprouts with a green pepper cut in strips, and used boneless chicken thighs. Would make again.
