Peanut Noodles

Reviewed: Nov. 7, 2014
Inedible salty as written. Not sure how to fix as I'll look for a different recipe to try.

Tomato Chicken Parmesan one pan

Reviewed: Sep. 9, 2014
This is quick and really flavorful! To make it even easier, after sautéing the chicken in a cast iron pan, I pour heated sauce right on top, top with the cheese (had and used provolone) and put it straight into the oven.

Vietnamese Rice-Noodle Salad

Reviewed: Aug. 20, 2014
I used 16 oz. of noodles (package size), boiled shrimp separately and added, doubled sauce, use shredded iceberg lettuce instead of cabbage and followed everything else exactly including garlic and cilantro quantities. Very yummy! Wish I had thai chilis!

Easy Peach Cobbler

Reviewed: Jun. 29, 2014
So easy and great! I must bake gluten free so used a double layer cake mix (Betty Crocker GF only makes one layer) and then followed everything else as written (making changes in prep as per other reviews. It was easy and delicious!

Monday Night Mac and Cheese

Reviewed: Apr. 22, 2014
So good and so easy! I used gluten free pasta so added an additional cup of water to first step (GF pasta absorbs more water). I used rice thickener (slightly less than called for of flour for same reason). Didn't want to splurge so I used basic sharp cheddar. It was great and will become a new family favorite!

Baked Honey Mustard Chicken

Reviewed: Feb. 11, 2014
This is good and simple. Made exactly as directed though I did cover with foil for the first 30 minutes of cooking just to keep moisture in. Hubby really liked it!

Slow Cooker Enchiladas

Reviewed: Jan. 8, 2014
My family loved this. Mine was very soupy so next time I will add quite a few more tortillas (double layer).

Slow Cooker Vegetarian Minestrone

Reviewed: Jan. 8, 2014
This is actually a little dull and I sautéed onions, etc., ahead of time to get every bit of flavor I could. Wanted to love this but didn't. That said it is satisfying enough and is providing an easy lunch as leftovers. But no one else in my family will revisit it.

Peanut Butter Kiss Cookies

Reviewed: Oct. 19, 2013
I love these cookies as does my entire family. I make a triple batch of them! I do a little different than the recipe. Instead of white sugar I use 1c brown, 1c confectioner's and 1c white with 3c peanut butter and 3 eggs. I like that the brown sugar gives them a little chewiness and the confectioner's cuts the white sugar so you don't get any gritty texture at all in these. It also stiffens the dough so they don't spread. You can do them with more confectioner's sugar if you like a really solid cookie. I also use a small scoop to form these and just put the flat side down on the cookies sheet-no rolling and rolling! Enjoy!

Exquisite Pizza Sauce

Reviewed: Jul. 2, 2013
I found this too sweet and too spicy and I'm not particularly picky about either flavor. It's just that they didn't meld or balance, even after sitting.

Penne with Chicken and Asparagus

Reviewed: May 28, 2013
Yummy and easy! My 11 year old daughter made this with only a little help sautéing chicken. We used spinach instead of asparagus because that is what we had, but it still turned out to be a delicious meal! Great easy staple!

Creamy Chocolate Frosting

Reviewed: May 21, 2012
Only comment is that the amount you get is skimpy. Definitely increase if you like a lot of frosting. I'll probably double next time for a layer cake. May have some left over but that's easy to take care of!

Simple Garlic Shrimp

Reviewed: May 1, 2012
Absolutely delicious. Almost skipped the caper brine but decided on a last minute trip to the store for it. Absolutely worth it as it adds a certain zing. Company or weeknight - couldn't be better! Be sure to watch the video: it is short and gives helpful instructions.

Chicken Pot Pie GF DF

Reviewed: Jan. 7, 2012
This is a great basic recipe but too many changes are required to merit a higher rating. Dryness can be fixed with less thickener - just add flour little at a time until desired thickness. No need to make more sauce. Add garlic powder and thyme for more flavor. Mix sauce with chicken before pouring in shell. Slower, lower baking worked well, too: 375 for 45 mins. Brush lower shell with egg white and bake for 5 mins. before adding chicken mixture to prevent mushiness. Also, I made mine dairy free with Earth Balance and rice milk. Worked perfectly.
