Shrimp Scampi

Reviewed: May 10, 2015
Easy and delicious. I used scallops and like other reviewers added lemon juice and a little lemon zest along with salt and pepper. I sauted the scallops but then took them out to let the wine reduce and then added them and the pasta in. Tasty.

Turkey Veggie Meatloaf Cups

Reviewed: Apr. 20, 2015
Very good, healthy and easy, even husband liked them and he's not a big ground turkey eater. I'm always looking for lunch or snack ideas, could make sandwiches. Per other reviewers I added some minced garlic, salt and pepper. I did not have couscous so I just used seasoned bread crumbs, delish. Will make again.

Sausage Pasta

Reviewed: Mar. 22, 2015
I have to say this was pretty tasty. I used both mild and spicy Italian sausage but I did have to drain the meat and next time I will use fresh spinach. I also added salt, pepper and Parmesan during and after.

Slow Cooker Beef Stew I

Reviewed: Mar. 5, 2015
Very good and husband liked it. I thought it was a little over cooked although we cooked it for 7.5 hours and then to warm, but I think it's my slow cooker. Next time I'll add more seasonings and more liquid as we like our stew a little saucy, especially next day.

Chicken Marsala

Reviewed: Feb. 21, 2015
Very very good, husband loved it. I bought good marsala wine, doubled the sauce, served it over egg noodles, yum. I added a little flour and salt pepper to the mushrooms before I added the liquids. I also added some pasta water to the mixture as it was a little strong at first. Next time I will triple the sauce.

Stuffed Peppers

Reviewed: Jan. 21, 2015
Never made these before and wanted to try something new. My husband and I loved it! At first I thought the rice was not going to be enough but yup. I did boil the peppers first, next time I'll roast them first. I added some canned, chopped chipolte chiles in adobe sauce to the ground beef that I had leftover from another recipe and some cayenne pepper for a little heat, yum! Will make again.

Gravy Baked Pork Chops

Reviewed: Nov. 12, 2014
I listened to other reviews and sauted onions and garlic, added extra seasoning to the chops, and added a can of the Golden Mushroom soup. I added a little bit of milk and water to the soups and poured it in the pan after the chops were taken out so I can get the bits and seasonings from the pan, poured it over the chops and put it in the oven for about 45 minutes. The gravy was delicious but my chops were not as tender as I thought they would be. Maybe I seared them too long? Everyone else loved it, served with mashed potatoes and cream corn. Next time I'll probably cook them at 325 for 50 minutes.

Honey Glazed Pork Tenderloin

Reviewed: Oct. 12, 2014
Love, one of my staples for Sunday or special dinners, no complaints. I season the pork with s/p and sear it first on all sides first then I stick in the oven. Will try with garlic next time.

Chef John's Lasagna

Reviewed: Jun. 18, 2014
I rarely give 5 stars but this is a winner and loved the video that went along with it, really helped and easy to follow. Husband couldn't stop raving about it. I served it with a salad. The only thing negative is the ingredients list is a bit confusing, ricotta amount, but I figured it out. Will use and make again.

Strawberry Oatmeal Breakfast Smoothie

Reviewed: Oct. 31, 2013
I just bought one of those fancy expensive blenders and love making different smoothies. I was actually looking for something more filling in the morning and adding oats is a great idea! I'm not a vegan or vegetarian but I must say this was pretty tasty. I halved it and just used vanilla soy milk instead of the extract and organic agave nectar instead of the white sugar. Next time I will add some veggies.

Beef Stroganoff III

Reviewed: Oct. 27, 2013
My first beef stroganoff and I have to say pretty good. I usually read reviews first but I didn't have time so my meat did not come out as tender. I halved the recipe. I used already cut up beef stew meat, next time I'll marinate it like another reviewer for 2 hours in red wine, worcestershire, and minced garlic. I did add a little bouquet gravy. Will make again.

Pesto Chicken Florentine

Reviewed: Mar. 21, 2013
Followed the recipe, just okay. I couldn't find a 4.5oz pkg of Alredo only Knorr's 1.6oz packet so I bought a couple, almost burned it! I found my pesto sauce but it was a little expired so I only used a little. I should have listened to other reviewers about starting your pasta because this is a quick meal. It came out okay although it did need salt/pepper but I think, like others, I'll use jar Alfredo sauce next time.

Fresh Southern Peach Cobbler

Reviewed: Feb. 12, 2013
Very good. I only had frozen peaches (much easier) so will try when they are in season. I read other reviewers and doubled the crust but I think I'll leave it alone next time. Thanks for the recipe.

Slow Cooker Turkey Legs

Reviewed: Feb. 12, 2013
I was skeptical at first but they did come out tender and hubby loved them. I only cooked 3-4 legs because that's all my slow cooker could fit so I shortened the time a little. They did not come out crispy and brown like the picture so that person must have seared, grilled or broiled them afterwards. I will try this in the oven when time is short.

Easy Vegetable Beef Soup

Reviewed: Jan. 4, 2013
I've made this twice now and turned out very good and my family likes it alot. My mother already wants the recipe. I used ground turkey for health reasons and like another reviewer used tomatoe paste to thicken, used mostly beef broth, added a little italian seasoning and a pinch of cayanne to give it a little more flavor. Delicious with biscuits and easy to freeze.
