Swiss Chicken Casserole I

Too salty for my tastes. I'm not sure what I would change to improve it but it certainly wasn't my favorite.

Mexican Turkey Stuffed Shells

Fantastic recipe although I made several changes to accomodate what I had on hand. First I used lasagne noodles since I didn't have any shells. I cooked the shells in water for a few minutes then put a spoonful of the mixture and rolled them up. I also increased the cilantro to 1/2 cup because we love cilantro and added chopped mushrooms and chopped garlic. I sauteed the turkey with the onion, garlic and mushrooms. I skipped the oregano, cumin and ricotta. After I sauteed the turkey and veggies for just a couple of minutes, turkey was not fully cooked. I put 1/2 cup pepper jack and monterey jack into the mixture. I then put everything in the food processor and added 1/2 cup cilantro and blended it all together. I then rolled the mixture up in the lasagne shells and baked them in the oven for 20 minutes until turkey was completely cooked. I used a mixture of sour cream and salsa to top off the roll-ups. My husband loved it! We will have again weekly.

Chicken and Cheese Stuffed Jumbo Shells

We loved this recipe, one of my favorites and fairly low-carb. I made a few substitutions to suit our personal tastes and thought it couldn't have been better. I added 1/4 cup red onion, 1/3 cup chopped sundried tomatoes, 1/4 cup fresh basil, 1/3 cup chopped artichoke hearts. Parmesan cheese in addition to the others and I used Monterey Jack instead of Mozzerella. I also chopped everything up together in a food processor before stuffing into shells. I thought the cubes of chicken would be too much and this blended all the flavors together perfectly. I sprinkled more cheese on top before baking. I made the recipe for a basil cream sauce which I poured on top of the shells before serving. I didn't have cream on hand so I used sour cream and it will still delicious.

Broccoli, Rice, Cheese, and Chicken Casserole

My husband loved! this recipe. I made a few substitutions however before I made it. I used Jasmine riced already cooked and cooked fresh chicken breast cut into cubes. I also used fresh brocolli and red onions instead. I added 1/2 cup of chopped basil (or cilantro.) and used three kinds of cheese instead. I added crushed french fried onions to the top before baking as well. Delicious!

Fresh Asparagus and Chicken Casserole

I thought this was a great recipe except I made a few changes to what I had on hand and what we prefer. I omitted the peppers and celery since I didn't have any and replaced with chopped onion, sundried tomatoes and mushroom. sauteed all veggies in olive oil (including the asparagus) and fresh chopped garlic, red pepper flakes before adding to sr.cream mixture. substituted 1/4 cooking wine & 3/4 cup broth. added can of cream of chicken soup with sour cream to give more sauce, I didn't think the sour cream would be enough and would dry up while cooking. I also substituted 1/2 cup basil (or cilantro) for oregano because those spices are our favorites and oregano is pretty bland. I also added some monterey jack and some crushed french fried onions to the top after putting it all together in the pan, I used a 9x13 casserole dish. This was one of the best dishes I've ever made and will certainly make it many times in the future. My husband also loved it.
