Holiday Cranberry Yeast Bread

I rarely try a recipe without of lot of reviews, but I gave this a try. Our bread didn't rise. My husband thinks it was the age of the yeast, but I have my doubts. It was also a very sticky dough when I was kneeding it. As if there wasn't enough flour, or too much moisture, but I didn't know how to control the issue, so I stopped adding flour and let the bread to what it would, and it didn't do much. I will try to make this again, and re-review. Other suggestions are appreciated.

Delicious Raspberry Oatmeal Cookie Bars

Slow Cooker Tomato Chicken

After seven hours the chicken was dry and over cooked. It completely fell apart and was a shredded dinner. I thought the combination of ingredients would make for a good taste. I will try again with a shorter cook time to keep the moisture and the flavor.

Sauteed Apples

These were fine sauteed apples, nothing outstanding and awe worthy, but very good. We added dried cranberries to the last half of the batch. That was a good addition, again, nothing "wow."

Sausage Apple Quiche

Taking suggestions from others, I used two 9 inch pans and two crusts. We choose a pound of lean mild pork saugage to crumble and brown and put on top of the cheeses and parsley. This one pound was plenty for two dishes. It also ensured sausage in every bite. The egg and milk was not enough for two pies, so I increased the eggs to 7 and the milk to 2 cups. We used one and half large gala apples, snacking on the remaining apples while we waited on the quiche to bake. Because I used disposbale pie pans I placed them on a large jellyroll pan in the oven. When I reduced the heat I also put a crust shield (folded aluminum foil) around the pies to keep them from over drying and browning. It took about 15 minutes longer in our oven, which could be due to the extra pan under the pies and having two in the oven simultaneously. The quiche was very good. It had a sweet savory flavor that was accented by the salty crust and cheese.

White Pizza with Porcinis

Thinking I could multi task, I used my bread machine to prep the dough and it was far more than I needed, and sticky. I will try the dough as instructed and see if I get better results. The toppings were good, just the right amount of nutty cheese flavor and savory mushroom. We couldn't buy porcini and used another dried mushroom, but felt the flavor was only slightly compromised with this selection. Because of the enormous amount of dough the one cup of cheese and small amount of ingredients left the pizza scantily covered. I will certainly be either reducing the dough in half or doubling my toppings next time.

Garlic Bubble Ring

Simple and easy. I thawed two pounds of bread and made 8 balls from each and I still had plenty of butter sauce left over. We used real butter instead of margarine and it seemed to crisp the outter coating of the bread (margarine may have the same effect). I was trying to make a monkey style bread. We ended up with one bundt pan bubble ring and a 9in round cake pan "loaf" with the two pounds of dough.

Pizza Without the Red Sauce

Couldn't have asked for a more well rounded and delicious crowd pleaser. We used a whole wheat Bolboli thin crust and baby spinach. It baked down well and maintained that fresh veggy flavor..

Gingerbread Men

We made Eilen's Spicy Gingerbread Men a few weeks back and thought they were great (but spicy, just like the recipe says). Then today we gave this recipe a whirl. It was terrific. The dough was very brittle, almost dry and made about a dozen and half 4 inch men for us. We don't roll our dough very thin because of preschool age children break very thin cookies much easier! The taste was top notch. Not spicy, but just warm and yummy. I was surprised I couldn't taste a strong butterscotch flavor, it was there, but very subtle. I must also disclaim I used instant pudding instead of cook and serve as the recipe called. I didn't do this intentionally, but b/c I didn't copy the ingredients down to my shopping list correctly. I will try it with the cook and serve version and re-review.

Pumpkin Muffins II

I failed this recipe, it didn't fail me. I made changes based on others suggestions without first giving it a go "as is." I was disappointed with the strength of the spices, they left an aftertaste I couldn't shake off. I also didn't like the substitution of applesauce for oil or oats and whole wheat for all purpose flour. The muffin was very lumpy, dense, spicy and "healthy" tasting...an overly gritty quality. I will make this again and re-review soon.

Barb's Pumpkin Chocolate Chip Muffins

We made this without chocolate (b/c we were out) and they baked up thick and a bit sticky on top (too much sugar?). Not quite what we were hoping for. We'll keep looking for something lighter and more bready.

Pumpkin Casserole

I couldn't have dreamed up a better vegetable accompaniment for our dinners. My very very picky 5 year old asks for this for her packed lunches for school. It's the only veggy I can get into her these days. I do lower the sugar and add the extras to make up for not using self rising flour.

Spaghetti Squash Casserole

Good new use for spaghetti squash. we didn't have the croûtons, I used french fried onions and couldn't imagine this dish without them. For the leftovers I served it atop mashed potatoes.
