Garlic Green Beans

A HEAD of garlic is a whole garlic, not a clove. I think the people that claimed to need "more" garlic may have misread the directions. There are like 10-15 cloves of garlic in a head. I really liked this recipe. As others, I only used 1 Tbsp oil. I may use less Parm next time just to get more veg flavor, but it was tasty. I added the parm while hot, and it really coated the grean beans well.

Roasted and Curried Butternut Squash Soup

This was really tasty. I think I added significantly more butternut squash (3 small-medium sized), and only 4c of organic salt-free vegetable broth. Overall, the soup was a nice consistency and had a good flavor. I haven't added any yogurt to it, as I'd like to add that as I eat it.

Apple Chicken Quesadillas

Tasty, but the stuffing didn't like to stay inside the tortillas. I think the cheese wasn't sticky enough to keep in the chicken. Maybe I just need more experience with it.

These were tasty, but I'm not sure if the cheeses worked properly. It could just depend on the cheese you use. I think mine ended up a bit too wet and thin. Tasted good, though.

Vegetarian Kofta Kabobs

These were really good. Remind me of a black bean burger mix. I think these would make great patties, I shaped them into dumplings as they wouldn't stay on a skewer, and I added seasoned bread crumbs and milk separately.

Vegetarian Bean Curry

I like the taste. It's not like I've cooked before. I don't think I generally mix tomato with curry. I had to add a bunch of water to get the lentils to cook, though. Maybe I used the wrong kind, I used a small hard orange lentils (not the larger orange ones). I don't know how much water I added, maybe about a cup overall. The flavor is definitely unique. I liked the addition of the raisins.

Sesame Broccoflower®

Okay, I cheated. I couldn't ifnd Broccoflower, so I used some broccoli and cauliflower. I also couldn't find my sesame oil, so I used olive oil instead (seriously not the same). Tasted good regardless of the substitutions. I really need the sesame oil, though.

Portuguese Favas

I liked it, but think that 2 Tbsp pepper flakes would be too much. I added one.. and it was almost too much. I also couldn't find Fava beans, so added some "Fava chick peas" or something, and then a can of soy beans. Would probably taste good over quinoa. I really want to find real fava beans to try this again.

Brazilian Black Bean Stew

Mmmm.. Tasty.. I used Tomatoes with Green Peppers (rather than tomatoes, and fresh green peppers). Didn't add any salt or oil (it didn't need it). Used soaked beans and Andouille sausages (had no Chorizo). The mango was SUPER!

Lamb and Winter Vegetable Stew

Absolutely yummy. I've been eating this all week (I used some leg of lamb I had already cooked). I add the sour cream to each serving, rather than put it all in earlier. And I used celery root rather than actual celery because I had some.

Sweet Lentil Soup with Asparagus Tips

Sooooper-nummy! I was thrilled to find a recipe with lentils and curry... I was tempted to make it vegetarian (for my BF's sake), but instead relented and added 2 breasts of chicken. This is the best soup I've made. I didn't have fresh veggies (except the asparagus), so I added some frozen bagged mixed vegetables (corn, peas, carrots, lima beans), and a bag of stir fry peppers/onions. I think I need to make this more often.. Who wants to do my dishes?
