Easy Chocolate Chip Cookie Dough Truffles

I am teaching myself to be a baker/candy maker, so every week I try out a new recipe and bring the results to the people at my mom's work. I was told by both family and co-workers that these were the BEST treats I had ever brought(and they were up against a lot!)! I used chocolate chips for the coating, making some white, some milk, and some semi-sweet! All were fabulous! They were so easy and fun to make and absolutely delicious! I will definitely be making these again.

Peanut Butter Sheet Cake

So yummy! I usually use this as a middle layer between chocolate or yellow sheet cake when making large birthday cakes! I fill the middle with a mixture of marshmallow cream and frosting! I have gotten rave reviews for both flavors! When I made a smaller sheet cake, I used the left over batter to make cupcakes! So tasty! Thanks!

Pumpkin Bread IV

Changed the recipe to 24 count since I had never made anything like this and didn't want to make a lot just for my family. I filled up my loaf pan, and used the rest of the dough (after adding chocolate chips) to make muffins. They were fabulous! My extremely picky teen had four before I could stop him! I even used splenda brand sugar and brown sugar so I could have some too and nobody could tell the difference! Great recipe! I can't wait to make it again, especially around the holidays!

Perfect Chocolate Cake

I used just the cake recipe to make a cake for my family party. I was worried because I had never made cake from scratch before and had heard it can easily come out too dry. This cake definitely didn't have that problem! The cake was absolutely perfect! I used it to make a spaghetti and meatballs cake! The portion size was perfect, I was able to fill 3 8" cake pans and make 16 cake "meatballs" from the same batter! I covered it with white chocolate frosting "noodles" and raspberry sauce. Everyone fought over the last piece! I can't wait to try it again with your frosting and filling recipe!

Eclairs II

Since I started baking, a friend of mine very subtly told me that eclairs are his favorite. So I decided to make him some for a wedding present. I spent two weeks trying to find the perfect recipe before I finally found this one. Everyone who tried one said they were delicious! Though I wasn't able to getting them looking as pretty as I'd like, I was very pleased with the results. I will keep practicing until I get them looking just right!

Caramels

I make this caramel for my friends and family all the time, but since I can no longer eat sugar, I've trusted their opinions about how wonderful it is. But this weekend when reading the comments, someone mentioned not having enough corn syrup and using honey instead. Since I can eat honey, I got really excited. So today, I made a half batch of caramel substituting honey for the corn syrup and splenda brand sugar and brown sugar. And I have to say they are FABULOUS! They taste exactly how my grandmother's used to taste when I was little! They are a bit gooey-er than the regular ones, but after twenty mins or so in the fridge they were perfect!

Favorite Peanut Butter Cookies

I use this recipe for all of my peanut butter cookie needs, whether it be peanut butter cup cookies, white chocolate chunk, or just plain old peanut butter cookies, they are amazing! I even used the dough inside chocolate and topped with peanut butter frosting and a piece of a Reece's peanut butter cup on top!

Fluffy Pancakes

I needed a quick pancake recipe to make for breakfast this morning, and was surprised by how many excellent reviews this one had. I had to try it, and everyone loved it! I even used splenda instead of sugar (without telling my extra picky little brothers) and it was still a huge hit! I will definitely be saving this recipe!
