Cheesy Polenta Casserole

I loved this recipe. I used Sun Dried tomato polenta, added some peas to the tomato sauce (I used a can of sauce and used my own spices). I didn't have fotina, so I used a low fat italian blend. If done correctly this can be a low calorie dish. Turned out great and very versatile!

This has been a staple at all my holiday parties for 2 years! It's always highly requested and disappears quickly. Make two! I mix up the perserves everytime.

Baked Slow Cooker Chicken

This chicken falls right off the bone! I used butternut squash and onions on the bottom instead of tin foil and it turned out well! I recommend seasoning heavily.

Brussels Sprouts in Mustard Sauce

I loved this recipe! The mustard sauce is also good with artichokes, asparagus and even over chicken! Boiling the sprouts in chicken broth first really made all the difference. I added a small amount of horseraddish to the sauce for a little extra kick!

Slow Cooker Dump and Go Cheesy Chicken

This was a very easy, tasty dinner. I used Chicken Tenderlions so only had to cook for 5 hours and it was hearty with pasta. I added a splash of chicken stock for extra flavor.

Beefy Lentil Vegetable Soup

This was very good! I left out the celery and added frozen spinach (personal preference) and it was so good. I never would have thought to use V8 for a base...but it is perfect and I'm going to try it with other recipes too!

Zesty Slow Cooker Chicken Barbecue

I made this recipe with thawed chicken breast and the addition of 1/2 of a chopped onion and it was PERFECT. I am not a BBQ Chicken fan, but my husband so I figured I would make this to try it. I loved it! The sauce is amazing and it's so easy! Most of the stuff you already have in your fridge or pantry.

Deep Dish Brownies

I followed the advice of others and used 2 eggs and no baking powder as I like a chewier brownie. I also added a handful of chocolate chips in the batter before baking. These turned out wonderful, full of flavor and EASY! I'd never made brownies from scratch before, now I will often. :)

Best Chicken Ever

I used a Key West grill seasoning packet in the Sourt Cream and this turned out wonderful and I used lite sour cream and drizzled the chicken with olive oil and it was a very low fat dish.

American Shepherd's Pie

Tasted even better the next day. Definately a good meal to do "the night before". I added a can of corn and used Cream of Mushroom soup instead of vegtable soup. I also added a bag of mixed veggies. Turned out great!

Baked Spinach

Very Yummy!! I added some fresh garlic and onions to each of the layers. Would also be good with leftover chicken or beef added as well for a filling meal!

Pumpkin Cookies II

Very good cookies, very moist! I put my walnuts in the chopper and then added them to the mix, making them very finely chopped. Everyone at home and work raved about them. They even met the approval of a very picky 11 month old! :)

Slow Cooker Taco Soup

Very easy to throw together with a great flavor! I used the canned tomatos/chili combinations instead of a can of tomatos and a can of chilis, turned out great and was less to purchase! Very good for the winter months served with Tortilla chips, sour cream and shredded cheese!

Easy Beef Stroganoff

Very easy to make, I added some 1/2 a garlic clove to my onions and some additional seasonings to the beef and it turned out wonderful. Very flavorful and hearty! :)
