Best Ever Corn Muffins
Wow, so good. I cut the recipe in half and just used an 8x8 baking pan. Added about a cup of frozen corn and a cup of cheddar cheese (grated). Soooooooooo good.

Big Soft Ginger Cookies
Wow! These are the best cookies ever. I've made them quite a few times. They are a big hit at work, some even asking for the recipes. I've been making them for a while now. I also find really great flavour in grating in fresh ginger. Every time I open the container, this wonderful fragrance hits you. And they taste great. Next time I will have to try the orange juice instead of water, like suggested in other reviews.
