Oatmeal Toffee Cookies

Hmmm, does anyone find it strange that these cook at 300 degrees? Most cookies need to bake at 350 or so....and the directions say 10 to 18 minutes? That is a long range....Anyway, cooked first batch at 300 for 12 minutes, not long enough. Second batch at 300 for 14 minutes, cooled completely on baking sheet, much better. Third batch at 350 for 12 minutes and they were perfect! They don't spread as much at 350 and brown much better than at 300. Will make again with changes.

Roasted Garlic Bread

Turned out great! Be sure and use all 3 bulbs, not cloves. I only used 1 bulb, all I had, and the flavor wasn't strong enough. I wrapped the bulbs in foil first and ended up roasting the garlic for an hour. Watch the broiling time! Can easily burn if yours gets extra hot.

Simple Chicken Parmesan

This was excellent! I used my own red sauce, but the chicken came out great. I marinated the chicken in buttermilk, garlic powder and an egg for several hours first. I added a bit of flour, parmesan and salt to the breadcrumbs and didn't need the egg as my chicken was wet from the buttermilk. Pounded flat, dipped in breadcrumbs, back in buttermilk and again in breadcrumbs. Sauteed in olive oil, topped with cheese on a rack and broiled for a few minutes. Yummy! To the previous reviewer, if you pounded your chicken breasts to the recommended thickness they should only take a few minutes per side!

Cinnamon Raisin Swirl Bread

Maybe it's because I'm pregnant, but this bread was sooo good! I had to add some more flour, about 1/4 cup, as it was too wet and sticky in the bread machine. I also added a teaspoon of cinnamon to the dough and plumped up the raisins in boiling water before adding to the bread machine. After rolling out, I doubled the brown sugar and cinnamon for the filling. Baked exactly 30 minutes...perfect!

Ziti Chicken and Broccoli

Very yummy! Followed exactly as directed and it turned out great, boyfriend especially liked. To cook the chicken, I first marinated it for a few hours in milk, egg and garlic powder. I then combined fresh breadcrubs, parmesan, italian seasoning, salt and pepper in a large ziplock and shook each breast in mix one at a time. Repeat the egg and breadcrumbs one more time. Cook in vegetable oil over medium heat until cooked through. Will definitely make again! Thanks Lisa!

Texas Ranch Potato Salad

Very good. This is similar to my potato salad recipe I make, except I use red onions instead of green and more dry ranch. Add just a touch of yellow mustard and a splash of pickle juice..voila! Yummy ranch potato salad!

Shredded Beef Enchiladas

These were very good, but time consuming. I made the red enchilada sauce from this site to go with. I dipped my tortillas in the sauce instead of softening them in oil. Then I poured the remainder sauce all over the top of the enchiladas and sprinkled the cheese. I used a leftover brisket I had, shredded it and combined it with some ground beef. Will make again!

Walter's Chicken and Mac

This was good, but maybe a bit dry. Next time I will add more soup and milk. I used Campbell's cream of chicken and mushroom and it tasted great. Tastes a little like tuna casserole but with chicken. Definitely add spices like salt, pepper, garlic powder and maybe a little hot sauce or red pepper flakes. Very easy!

Texas Yum Yum

Only 4 stars as you really need a dip dish pie crust to fit all those layers! Very easy, tastes great but don't really like leftovers as the pie starts to "juice" a funny colored liquid and looks gross.

Grandma's Pork Chops in Mushroom Gravy

I used pork tenderloin and an 8 oz package of fresh sliced mushrooms instead of canned. I couldn't bring myself to use that much sherry, so I used 1 can beef broth, 1/4 cup sherry and the rest apple juice. I didn't have cornstarch on hand, so I used a few tablespoons flour mixed with a few tablespoons the juices after it came out of the oven. I whisked in to the rest of the juices and it thickened up nicely. Turned out excellent!

Oatmeal Peanut Butter Cookies III

Excellent cookies! I used a cookie scoop and cooked for 12 minutes (as they were larger). I flattened one batch but they only need to cook for 10 minutes. Take them out right when they are lightly browned around the edges and puffy, they will look like they are not done, but they will fall and be crunchy on the outside and chewy on the iniside. Oh yeah, I used more peanut butter, 3/4 cup. These are good with or without the filling!

Restaurant-Style Taco Meat Seasoning

I've been making a very similar version of this for years. It is so much better than the taco packets you buy! I always use this when seasoning ground beef for all of my mexican dishes. Thanks for sharing GVSWIFE!!

Will definitely use again! Marinate for as long as you can. I also marinated mushrooms and skewered them and grilled them along with the meat. Boyfriend LOVED the mushrooms.

Scrumptious Beef and Potato Casserole

This was pretty good, I guess not what I was expecting. There is so much liquid that it eats more like a thick stew. I used golden mushroom soup, added garlic and a Tb. of worchestire. If you don't add the cereal topping then don't add the cheese at the beginning of cooking. Add the cheese the last 15-20 minutes or it will burn.

Smothered Green Beans

These were pretty good, not anything to rave about. I thought they ended up a little greasy from all the bacon. If I make them again, I will cut down the bacon and definitely use beef broth instead of water.

Ultimate Twice Baked Potatoes

Extremely tasty! Rubbed the potatoes with vegetable oil before baking and ended up baking them 1 1/2 hours as my potatoes were very large. After scooping out flesh, cooked skins for a few minutes while preparing filling, makes them a little more sturdy and chewy for eating. All in all a very good tator!
