Yummy Yam Casserole

Fantastic, I made it for thanksgiving this year and everyone loved it. I baked my yams instead of cooking them in the microwave, and I put the pecans through the food processor for a quick pulse instead of putting them on whole, but otherwise I followed the recipe exactly and it turned out fantastic. Really, really good.

Roast Salmon With Balsamic Vinegar

Baked Dijon Salmon

Unfortunately didn't have pecans to cook with and cheated with ground up Italian croutons, but it was still very good. We'll definitely be making it again, and I can't wait to try it with the pecans.

Cold Day Chili

This is my absolute favorite chili, it is mild but still very flavorful. I went with pinto and black beans instead of kidney, used a horseradish deli mustard and apple cider vinegar, increased to a full cup of water, and added 1 small can of tomato sauce and 1 small can of tomato paste. With the extra liquid I got away with doing an extra can of beans so I had to of each, too. I also like to cook it for at least a half an hour, chili will always get better the longer you cook it. I live with someone who needs to eat the smallest amount of salt possible, the less the better, and this has really made it hard to find things to eat that aren't bland. Now that I've found beans and tomato sauce that are low sodium and no added salt, we can eat this chili, and it is really fantastic.

Black Pepper Beef and Cabbage Stir Fry

I have to be honest, I didn't notice that this was a ground beef recipe until I read a 3 star review of it. I used strips of beef precut for stir fry at the grocery store, and was sadly out of red pepper. I also live with someone who has some very strict requirements sodium-wise in her diet. That means that this had too much soy sauce for me to safely prepare, and I had to substitute worcestershire sauce instead. It was really fantastic, and I don't even like cabbage! I used bok choy.

Maple Cajun Mahi Mahi

This is now my absolute favorite way to cook fish. Other reviewers have said that a lot depends on the cajun seasoning that you use, and it definitely does. My grocery store generic is way too mild for this, so I usually toss in a little cayenne pepper. I don't always like spicy food, but something about the mix of the sweet and the spicy just hits home for me. I definitely recommend this recipe, just remember that a lot depends on which cajun seasoning mix you use. But even with one that's too mild, it will still be good fish.

Creamy Meat-Stuffed Zucchini

Just made this recipe, and my Grandmother loved it. I liked it a lot too, but it wasn't my absolute favorite. Really I may just not be a big nutmeg fan, but it was still good. Not a whole lot of work, actually fairly easy, but it does make quite a few dishes :). Overall a solid four stars.

Mama's Asian Chicken and Rice

This orange chicken is fantastic! I will say that I didn't use plain white rice, I made a side of fried rice instead so that I didn't need sauce for the rice. Also no five spice seasoning, so I made due with a little cayenne pepper like another reviewer did - and it was fantastic. I've made it a couple of times now, and it's going on my permanent recipe box.
