Broiled Tilapia Parmesan

This was EXTREMELY good!! I followed previous suggestions and added 1/3 cup Panko Bread crumbs (although im not sure they made a huge difference). Instead of using all butter for the 1/4 cup called, I melted 2 tablespoons of butter, then added enough Olive Oil to make the 1/4 cup then added 1/4 tsp of Old Bay. Well certainly be making again!

Green Beans with Bread Crumbs

I fixed these for our “Italian” themed Christmas dinner. They were a HUGE hit with everyone. I blanched the beans and mixed everything together several hrs before I was to serve dinner. Kept in the fridge then popped in the oven @ 350 for about 10-15 minutes. I think since everything had time to set and mix together, I didn’t get that “crunchy” effect other people were experiencing. Will definitely be making again!

Chocolate Covered Cherry Cookies II

Decided to make these for our cookie exchange at work. Recipe was VERY easy, and with a little over 1" balls, made 30 cookies. I made only a few changes: added a few tbs of cherry juice to the batter, put the cherry in before I baked, then put the chocolate in a zip-loc baggie and piped over the cookie while warm. Next time, will make smaller balls (about 1/2") so they are more bite size with a cherry in every bite.

Sweet and Sour Meatballs III

I followed the recipe to a t, but I didn’t think it had the contrast of sweet and sour I thought it would have. Anyway, I wont be making this again. My friends said that they didn’t care for them, even though every last meatball was eaten.

Sweet Pork Chops

The only thing I did different was that I used Applesauce instead of Apple juice. Worked perfectly, but just wasn’t crazy about the taste. Will not be making this one again.

Ham, Potato and Broccoli Casserole

I made this with leftovers from Christmas dinner. Used mashed potatoes on the bottom, 1 - 16 oz bag of frozen broccoli, cut up leftover ham, 1 can of cream of broccoli soup, not quite a full can of milk, and the mayo. Added shredded cheddar-jack cheese on top and baked for 45 min. Turned out wonderfully. Was a little runny, but not to the point that it made a big deal.

Garlic Creamed Chicken

What a great recipe!! I cooked in a skillet though because I wanted to cook fast, not wait an hour. I took some butter and added the chicken and mushrooms. Waited until the chicken was almost cooked through and added all the other ingredients. Had a wonderful flavor!

Chicken a la Creme

I only used a half pint of whipping cream, then added one small can of mushrooms, a dash of onion flakes and garlic powder, and a handful of colby jack shredded cheese. This added wonderful flavors to this QUICK recipe!!

Waikiki Meatballs

I used pre-packaged, plain meatballs and made the sauce in a crock-pot. Wasn’t a big hit at my Christmas Party. Don’t know if there was too much other food to pick from, or if people just didn’t like the way they tasted. The sauce lost flavor to me after cooking in the crock-pot. Didn’t have that “punch” I was looking for.

Was GREAT!! Made it for 2 4th of July parties this weekend, and came home with the empty bucket both times. Was a HUGE hit! Could use more cookies though. The cookie to pudding ratio wasnt equal

Turkey Sausage Noodles

I used sausage that came in links and just sliced them, if I ever made again, I would used ground sausage so there was more in every portion. Noodles became soggy the longer the dish sat, but it didn't last very long in my house anyway. Added some Tabasco to spice it up a little.

Beer Dip I

This was WONDERFUL. I used a blend of cheeses, only about 1 1/4 cups though. I think that 2 cups would be too much. I wanted to try this before I took it to a super bowl party and it was a hit at my house. I think I would even try it with some crab in it!!
