Double-Cheese Meat Loaf

This was outstanding. So moist and full of flavor. The only change I made was to add a little worcestershire sauce to the mix. Definitely a keeper!

Spicy Fisherman's Pie

The original version was bland. We sprinkled the top with some lemon juice and salted and peppered it. The texture was great...next time I will add a little more flavor and twice the chili pwdr. I used tilapia and added extra carrots. The fish flavor wasn't overpowering and that was nice for the kids.

Super Duper Zucchini Muffins

With just a few changes/additions, these are my family's favorite breakfast on the go! I substitute 1 C whole wheat flour and 1/2 shredded apple and one shredded carrot for 1/2 C of the zucchini. I also heap the t of cinnamon and have switched to pumkin pie spice (as I was out of nutmeg). It adds a little zing and they are super moist! IQF them on a cookie sheet for about 10 minutes after they are completely cooled and then throw them in a Ziploc for easy storage. When someone wants one, zap it at 50% power for 30 sec and full power for 15. It's just like they were straight out of the oven! Thanks for this one!

Fluffy Peanut Butter Frosting

This was exactly like the intro reads...light and fluffy, not overpowering. I put it on my zucchini brownies and it was the perfect match. Frosting generously, there was still about 1/3 C left to do graham crackers for snack tomorrow! This one goes in my favorites! Thanks!

Cranberry Chicken II

Ok, wow! I read the ingredients and thought I would be the only one to like it. Then I read the reviews and thought I could give it a shot for my family... 5 kids all loved it and had seconds! I followed the advice of those before me and only used 1 pkt of onion soup and reduced the dressing slightly. It was wonderful and is a new staple in our monthly menu. Thanks!

Easy Mini Quiche

This is a 'can't go wrong' recipe! I have a family of 7 and EVERYONE loved it. My 13 yr.old son said I could make this any time! I added crab to a few of them and some left-over smoked turkey from Christmas dinner to some more. What a winner!

Thai Peanut Chicken

What great flavor! This is a recipe you can improvise with so easily without altering the dish because it is the sauce that makes it! I used ground ginger instead of fresh, omitted the green onions and substituted different veggies to utilize what I had on hand. It was terrific nonetheless.

African Chicken Stew

My family liked this recipe. I served it with rice and it was good. It was a little pasty, but I think it was the combo of the stew with the rice. Next time I will omit the rice and serve it with a bread.

I am not much of a vegetarian meal lover and unfortunately I thought I could improve this recipe by adding some ground beef. WRONG! The soup was great until I ruined it. Don't make the same mistake, make it as is and you will be very happy.

Outstanding Chicken Dinner

Talk about a crowd pleaser! I have 5 children under 13 and usually someone goes hungry because of pickiness. This recipe had everyone asking for seconds! I actually used leftover baked chicken breasts and sliced them about 1 inch thick. It made it very easy to have 3 chicken breasts feed 7 people, with leftovers! This is definitely a new family favorite.

Chicken Jambalaya I

I invited a guest to my home for dinner who was from Alabama. This was the request for dinner and I had never made it before. Allrecipes to the rescue. My guest had 2 servings and said it tasted like Mom's! I did add about a pound of raw shrimp just before serving as well as a broiled, hot sausage. It was great! Thanks. CS, Kaysville, Utah
