Quick Hoppin' John Soup

This soup is really terrific. I have been making it for New Years for sevveral years. Use diced tomatoes with jalapenos for an extra kick, andoiulle sausage, onions, green pepper, and celery. I also add a dash or two of cajun / creole season ing. I haven't added garlin and I don't know why but I certainly will next time.

Buttermilk-Battered Calamari

This was the best I've ever made. The buttermilk makesw the calamari tender and the flour adheres better. One note, be sure you allow the oil to come back to 375 before frying another batch. My guests were eating faster than I could make it and some were cooked at a lower temp hence some were not as crisp as they should have been.

Spanikopita Muffins

I thought these were pretty good. The batter was dry but increasing the milk produced a nice moist muffin.
