Fiesta Frittata Casserole

Reviewed: May 13, 2004
This was yummy - but next time I'll follow the instructions a little better. I tried to cut it in half until I got to the canned ingredients - I just dumped the whole cans in. It was good, but I think it would have been better the way the recipe was written.

Chile Relleno Casserole

Reviewed: May 7, 2004
This wasn't exactly what I was looking for, but it was REALLY good. I did make a few changes - I only put in three eggs, and used more cheese than it called for (cheddar and mozzarella.) It was a lot like a breakfast dish, but the flavor was great!

Mombasa Pumpkin Dessert

Maybe we're too all-American, but we thought this was one step short of putrid. It seemed more like the base for pumpkin bread or something. Then again, maybe I did something wrong. Although it's more likely that you had to grow up with something like this to really appreciate it.

Cheeseburger and Fries Casserole

Reviewed: Feb. 15, 2003
Super, kid-friendly meal. The key is seasoning your ground beef properly. If you're saying this recipe is bland, it's probably because you didn't add enough salt, pepper and garlic to your meat. Also, it's great with ketchup and mustard - added at the table.

Chicken Spaghetti Casserole II

We enjoyed this - and it's a good thing, because it made a lot! (Even though I halved the recipe, we've had it for 2 meals, and I still have a little bit in the fridge!)

I LOVE these beans!!! Do you think I would get tired of them if I started making them every week? :)

Chicken Cordon Bleu I

Reviewed: Feb. 15, 2003
We used this recipe last night for our annual Valentine's Banquet here at our camp. Everyone really seemed to enjoy it. It probably would have been better with better quality ham and cheese. We just bought packaged lunchmeat ham, and individually wrapped (processed) Swiss cheese. we used the sauce recipe suggested by another reviewer. Yum! (1 can cr/mushroom soup, 1/2 c. sour cream, 1 T. lemon juice)

Jenny's Jambalaya

Reviewed: Feb. 7, 2003
Yum! My husband really loved this. But I used a can of tomatoes with green chiles, and that made it too hot for our 2 and 4 year olds. My 2-year-old loved the shrimp. He kept asking for "more hot dog." (one expensive hot dog, huh?) :)

Restaurant-Style Potato Skins

Reviewed: Feb. 3, 2003
These were so good! We ended up with a bunch of frozen potato skins that I didn't know what to do with. I tried just baking them with the toppings - nope, blah. This recipe was perfect! (except I did add salt and pepper after I fried them. Thanks!

Cornish Splits

Reviewed: Jan. 25, 2003
I made these for the first time last night and my husband loved them. I've made lots of bread, but this is my first try at dinner rolls. After reading the reviews about "wonderful rolls with kind of a bland taste" I went ahead and puut in a whole teaspoon of salt instead of 1/4 tsp. My husband said they reminded him of when he was in 7th grade and one of the cafeteria ladies would make hot fresh rolls once a week - he always wanted more. :)

Stuffed Cabbage Rolls

Reviewed: Jan. 23, 2003
I never realized how easy it was to make cabbage rolls. My family really enjoyed these. I did add extra tomato juice to the sauce (to make more of it!) and I added some Worcestershire, white pepper and paprika. Yum - I really liked what I got!
