Pierogi Casserole

This is fabulous but I did change some stuff. First, I use a container of Country Crock already made mashed potatoes. They're real mashed and they make this recipe SO much easier and you'd never know the difference. Also, once I made it and the store had NO lazagna noodles! I got rotini noodles and that's how I always make it now. The cheese and potato always stick in to the noodles. Yum. One more change! I mix the garlic/onion/bacon mixture IN to the mashed potatoes before spreading. My kids wouldn't eat it if all that was waiting for them in one big layer but mix it in and they don't know it's there, all they know is it makes it taste great! They ask me to make this all the time.

Eggless Chocolate Peanut Butter Cookies

These are really good! And pretty easy too. I was out of eggs and wanted to make cookies. They really came out great. Nice chunky cookie and they taste really good. My step-daughter's boyfriend is allergic to eggs and after tasting my finished product I immediately emailed her the recipe.

Easy Quiche

Very easy and very good. Somehow the baking mix separates itself out and forms a bit of a crust on the top and bottom! I didn't have cheddar or ham so I used muenster for the cheddar and about 1/4 of crumbled bacon instead of the ham. Really good. Will definitely make it again.

Surprise South Beach Mashed 'Potatoes'

For someone doing the South Beach Diet who is REALLY missing potatoes this really hit the spot! Unbelieveably like potoatoes. I will admit I cheated a tad and put in a glob of that smart spread that the South Beach diet recommends rather than the butter spray. But I did use the fat-free half and half. They were YUMMY! Will definitely be making them again. Soon!
