Roasted Tomatoes with Garlic

My mom makes these all summer long, so good! she doesn't use garlic, just cherry tomatoes cut in 1/2, or slices of roma's; they get brown & carmalized, like sun dried tomatoes. so great as an appetizer or in pasta, thank you!

Green Rice I

Delicious & easy! based on other reviews I added 2 cloves fresh garlic & 1/4 t. pepper. And I used what I had on hand: skim milk & butter, not evaporated, all Parmesan cheese & 9 oz. of fresh spinach in a bag. It is a really good spinach gratin rice side dish, great with a steak & salad. Thanks!

Mom's Chocolate Chip Cookies

I have enjoyed cooking dinners for several years but have always been intimidated by baking. A good friend makes choc. chip cookies w/ pudding mix & I was looking for a recipe similar to his. This was the 1st time I've made choc. chip cookies & I am ecstatic with the results! I suddenly have visions of baking cookies for the kids my husband & I don't even have yet! Based on reviews: I used only 1.5 sticks of butter, used the whole bag of milk chocolate chips, added 2teaspoons milk (skim) & 1/4 teaspoon of salt. And baked only 10 minutes. They taste like a trendy gourmet bakery, thank you!

Chinese Cabbage Salad

I've made this 5 times this summer, so easy & so good! I use a bag of shredded coleslaw mix to be quicker. Everyone loves it & it's not as salty or high in sugar as several other recipes for this salad. Cheaper too w/o the cashews. I bought the sesame oil, pre-toasted sesame seeds & rice vinegar for 1/2 of the cost of my grocery store, by going to a local asian market.

Chicken Tortilla Soup I

Delicious & very flexible! Changes: I used an extra oven roasted chicken that I made (My mom told me to always do 2), used white beans only (canelli & butter) & 2 cans of chili - ready diced tomatoes. Also no hominy, it had too much sodium.

Sausage Rolls

Loved it! My boyfriend did this app. for us for my birthday, but no pie crust, he used a can of crescent roll dough, cut them in triangles, added a tablespoon or 2 of good Hot Italian Sausage not in the casings (big difference, it was great!) and some yellow mustard, they were not greasy & no need for cheese (and I LOVE cheese); they were awesome, thanks!

Chocolate Delight

My family loved this!! Made it for my dad's birthday & it was great! Just did it 4 hours before dinner...used an entire package of Skor crushed candy (in the choc. chip isle) like other suggested, thanks! We're using it for my cousin's wedding shower too.

Awesome Broccoli-Cheese Casserole

crowd pleaser & SO easy! I used cheesy broccoli soup instead & didn't even have time to sautee onion, just omitted it; may cut down the mayo (to 3/4C.) or use lite next time, it was a bit powerful.

Chinese Napa Cabbage Salad

My mom makes this with cashews, not almonds & it is THE BEST SUMMER RECIPE EVER!! It's wild how the different ingredients combine to make such a unique & flavorful dish, like other reviews, you can't tell it's raw cabbage, it's just crunchy. Reminds me of the Lettuce Wrap appetizers you get at PF Chang's.

Chocolate Rainbow Cookie Bars

Great & simple recipe! I used reg. sized easter colored M&M's for the 7th graders I work with, for easter, & used no coconut or nuts, & they loved them! I crushed grahmam crackers, but it would have been even easier with bought crumbs. Thanks!

Thai Style Chicken Pasta

I loved this quick/easy/delicious recipe & fwd'd it to all my friends; you can tone down the hotness or use red pepper powder instead & to make it more elegant, for a thai dinner party, use rice noodles not pasta, serve with a bowl of crushed peanuts for topping, and garnish the plates with lime wedges & a flower blossom.

Tyson's Easy Chicken Curry

I spent 20 min. online searching for a curry recipe similar to how my Dad makes curry - this was it! I love a saucy curry, no coconut milk, more in the mideast tradition. I used this recipe as a base & doubled the chicken broth, added garlic, 1/2 cup raw carrots, 1 cup fresh broccoli & tripeled the raisens, and then I let it simmer for about 40 minutes. Also, I did not use apple & used olive oil not butter. It was great!
