Easy Indian Butter Chicken

Super tasty and very easy! Did as many recommended and cooked in one pan and used 1/2 c butter and evap milk instead. Definitely adding to the dinner rotation!

Zucchini Cobbler

YUM! Family didn't realize it was zucchini between the layers of crumble. With amount of filling, used 8x8 pan, leaving quite a bit of crumble after covering zucchini, so put in fridge and used on Mom's Zucchini Bread. Being diabetic, I used all Splenda in the recipe and it was delicious!

London Broil I

I have now cooked the meat two different ways - on the Foreman and in the crockpot. I added the meat and marinade to gallon freezer bags and had them both in the freezer for later use. I thawed each overnight in the fridge prior to cooking. They were both terrific, but I must say the marinade lent great flavor to the veggies in the crock and I will definitely repeat! I dumped the whole bag in a burner safe crock and browned the meat for a few minutes on each side, allowing the sauce to thicken a bit at the same time. I then moved the crock to the crockpot, added potatoes, carrots and green beans then cooked on low for 6 hours. The one difference to the ingredients used is that my soy sauce is Hot Honey Soy. The little bit of zip from the spice was tasty, even for the 12-13 yr old boys in the house! Great way to make a good meal from a less costly cut of meat!

Grandma's Chocolate Zucchini Brownies

Perfect right out of the pan brownies! Not over chocolatey. If didn't know it was there, would never guess they have the zucchini in them. Will definitely make these again!

Mom's Zucchini Bread

Delicious! I used a mini-loaf pan so ended up with 4 smaller loaves, perfect for freezing some to have in a few weeks. I did use some of the crumble topping on each (left from a cobbler) and that little bit of crispiness really added a bit of zing. Baked up light & fluffy. Can't wait for zucchini next summer!

Sarah's Applesauce

I had a bushel of apples to use, so started with about 30 apples using this recipe. Added about 1 1/2 tsp of nutmeg along with 2 1/2 Tbsp cinnamon. Used 2c Splenda instead of sugar and now have 8 pints of canned applesauce! Thanks for sharing!
