Apple Banana Cupcakes

Wonderful! Fluffy and soft - even my one-year old could eat them by herself! I used cake flour instead of all-purpose cos the cake flour I get around here has lower gluten content and the cupcakes were really light! I also reduced the temperature to 350F and they were done in 17 mins - people who have wildly varying ovens should start watching the cakes at around 15 mins. Chopping the apples gave the cakes a wonderful bite. Thanks for sharing Barbara! At first I thought 24 cupcakes would be too many for my small family but they disappeared as soon as they were cooled.

Banana Pancakes I

Declicious! Just enough bananas and sugar without being overwhelmingly sweet or cloying. Be sure to use low gluten flour for fluffy pancakes though. I added some chocolate bits before I flipped over and my kids (who are choc monsters) went ballastic over them. Better double the recipe while you are making these cos they sure disappear fast!

Delicious Moist Poppy Seed Cake

The cake is really moist and lemony and yet light. No raising agent so be sure to cream your butter and sugar REALLY well if you want your cake to be light. The quantities called for really fills the 9x5 loaf tin, so if your oven is unpredictable (like mine), it could be best to use a bundt tin. Otherwise the sides will be drier while the middle is still damp (not moist). I got a more evenly baked and moist cake with a bundt tin. If your poppyseed happens to be the hard kind (like the ones I got), you can soften it by soaking it in warm milk for about an hour. then just tip the drained poppyseeds in the batter after you've beaten in the eggs.
