Tender Potato Biscuits

So I had left over mashed potatoes and didn't want to throw them out. Came on the sight and found this recipe. WOW! Glad I stumbled upon this one. I followed the recipe exactly. I mean I didn't change a thing. Tender, fluffy biscuits turned out. I had 18 good sized biscuits and my kids loved them. Even my picky eater husband liked them. Thanks for the recipe. I will never again throw away my mashed potatoes. Next time I will try to throw in some grated cheddar cheese.

Ginger and Spice Cookies

I just took these cookies out of the oven and tried one. It was good but not better than that. I find the clove is a very strong spice and a little goes a long way. 1 1/2 tsp is too much. The ginger gets lost in it. I followed the recipe to the T but next time I will put 1/4 tsp clove and 2 tsp ginger and sprinkle some sugar on top.

Breakfast Bread

I read all the reviews and took some adjustments into consideration. It is beyond me how it is even possible that less than 3 cups of liquid can support 7 cups of flour. I followed the directions to the T and after adding the first 3 cups of flour, the dough was already very dense. I tried adding the next 1/2 cup and had trouble kneading it. The other 1/2 cup was even worse to knead in. I finally gave up and placed it in the oven to proof. It stayed in there over night and barely rose the next day. I cut it in half and placed it in two loaf pans and returned it to the oven to proof again. No luck there either. Finally cooked it and it was so dense and bland. Will not make this again. Can someone tell me what I did wrong? My yeast was live and I followed the recipe exactly.
