Tomato Zucchini Casserole

I just made this and it was really good, I did take the advice of others and let the tomatoes sit on paper towel for a bit first. The only reason I gave it 4 stars was because I modified it so much. I honestly don't think you can go wrong with this. I didn't want all the fat and that is why I modified so much. I layered it like lasagna and on top of each layer I added some salt/pepper/onion (I didn't cook it first) basil/oregano/minced garlic/and a little parmesan cheese. On the final layer I topped it with more parmesan cheese and some bread crumbs and then sprayed it with non stick cooking spray. The last five minutes I put it under the broiler. I served it with some pasta and added some crushed red pepper on top. It was a huge hit.

The Best Rolled Sugar Cookies

I made this and followed other reviewers suggestions. The dough is what I would expect as far as working with it. Sugar cookie dough in general can get very sticky unless you work with it cold and in small batches. I would agree that you should roll it out in powdered sugar instead of flour and add extra vanilla. Without doing that I think they would have had that flour taste other reviewers were talking about. I found that with my oven the perfect time was 5 minutes. All of my friends loved it and a week later the remaining cookies are still soft and yummy. This will be my go to recipe from now on.

Baked Spaghetti Squash with Beef and Veggies

I made this last night, it is a very forgiving recipe. I used mild italian sausage and didn't measure any of the spices, I just put them in based on our personal preferences. My family loves garlic and onion so I'm sure I added more than the recipe called for. I also used two cans of the diced tomatoes. I will definately be making this again!

Award Winning Soft Chocolate Chip Cookies

I followed the directions as stated and found that my cookies took just a bit longer to cook (14 minutes). I would say these are good but definately not the best chocolate chip cookie I've ever had, definately soft and moist but they are missing something. I think I'll try something else next time. Don't get me wrong, there is nothing bad about these and they are perfectly fine to serve to others, just not my favorite.

Fabulous Zucchini Grinders

I have to say I was skeptical at first on this recipe but I was sick of soup and had zucchini that had to be used. I only made a couple of changes, I added some chopped onion, green and red bell pepper, and garlic. It was AMAZING. We loved it so much we had to have it two nights in a row. LIke others we toasted our bread first.

Tangy Salad Dressing

This is a big hit, even with my kiddo. I used Red Wine Vinegar and halved the sugar. Like others I used celery salt and added brown mustard. Note, it is still very sweet. Next time I will add even less dressing. Even so, I am sure this will become a staple in our refrigerator. I'm sure it will be a 5 star recipe for me next time when I reduce the sugar.

The Best Vegetarian Chili in the World

This was amazing! My entire family loved it. I did change it a bit, I added a zucchini from the garden, then tried a couple of different types of beans. This is a very versitile recipe and great to exeriment with.
