Chicken in Creamy Sun-Dried Tomato Sauce

I made this for Valentines day dinner and it was a big hit. For starters I didn't make in the croc pot nor did I use soup. I grilled 2 chicken breasts and seasoned with mccormic perfect pinch mediteranian seasoning. I cooled them and chopped. Used small container heavy cream and cooking wine for sauce. Added everthing else as directed to pan on stove top. Simmered 20 minutes and served over whole wheat rotini. I did leave out capers because I couldn't find any in my local grocery store. I rinsed the olives and artichokes before chopping and adding. Very good the hubby loved this.

Chocolate Strawberries

These were so easy and delicious! I used 1 bag ghirardelli semi sweet premium baking chips and one bar ghirardelli intense dark (60%). I bought 2 packages regular strawberries, threw the few mushy ones to the chickens. I melted chocolate and dipped as directed. I did use the fork method as described by another reviewer to add fancy white chocolate stripes to my berries. I had a little dark chocolate left over so I poured it onto the wax paper next to the berries (ghirardelli is to expensive and yummy to waste) and let it cool into a dark chocolate glob, lol. My husband loved these for valentines day desert. I sent the leftovers to work with him to give to his boss and coworkers. Everyone loved these and were impressed that they were home made!

Campbell's® Creamy Dijon Chicken with Rice

This recipe seemed to be missing something. Not that the flavor was bad, but I couldn't taste the mustard. I even added extra mustard. I followed recipe exactly except adding extra mustard and adding fresh carrots and broccoli. I let it simmer a little longer to cook the veggies. Maybe with the addition of some fresh herbs we could call this herbed chicken.

Slow Cooker Chicken Taco Soup

This turned out great! I didn't have all the right ingredients because I had planned on a different dinner tonight. The only substitutions I had to make was cajun seasoning + cumin instead of taco seasoning. I had 1 can of diced tomatoes with chilis and 1 plain. I also used only dry black beans because that's what I had on hand. I used 2 bottles of Leinenkugels fireside nut brown. I sauted the onion in olive oil with some minced garlic before adding to the crock pot. I didn't have any corn, but will make sure to pick some up next time I make this. Turned out awsome, my husband went back for seconds. Thanks for sharing! To sarah, some of the other reviewers mentioned using chicken stock in place of the beer.

Sam's Famous Carrot Cake

This was my first time making carrot cake, I made for my husbands birthday. I made according to recipe with 3 small changes. I substituted half whole wheat half all purpose flour. Half apple sauce half oil. I didn't realize I was low on sugar so had to use 1/4 cup brown sugar, the rest white sugar. Mine was done after 45 mins, so keep an eye on it. I like this cake, but the carrots seemed to long. Next time I make I'll put in food processor for a second. Also seemed a little to chunky. I'll prob try 3/4 cup of raisins, coconut, and walnuts next time. Seems like it could use a little more spice. Overall a very tasty and moiste cake. Thanks for sharing grandpa Sams recipe.

Potato and Cheddar Soup

This is pretty much the same recipe I got from my high school foods teacher years ago. The first time I made it I did not have enough milk so I used 2 cans cream of mushroom soup and about 1 cup milk. I leave the skins on, peeling off only impurities. I also saute the onions in a little olive oil with fresh crimini mushrooms and garlic. This soup is really versitile, if I have fresh carrots and celery on hand I add some in. My husband raved about this soup! He not only went back for seconds, but thirds as well. Great cold weather dinner soup.

Pumpkin Black Bean Soup

My husband and I both really liked this soup. Mine did turn out darker than in the picture but the taste made up for it. I followed another reviewers advise and added 1 1/2 tbs cumin, 1/2 tsp cinnamon and 1/4 tsp nutmeg. I also added 1/2 tsp cajun seasoning. All I had was white vinegar, I thought it might be to strong so I skipped entirely. This was even better the next day. My husband is still talking about it 3 days later. I will make this again.

Tender Pork Spare Ribs

This recipe was wonderful! I made this in my crock pot and it was fall off the bone tender and flavorful. I only made 1 rack for my husband and myself. I used 1/2 C brown sugar, 1/4 C cajan seasoning and 2 tbs smokehouse maple for the rub. I Used 1 bottle honey wheat beer for a little extra flavor. Garlic, honey and mustard as directed. I set the croc pot to low and let it cook for 3 1/2 hrs. I was very pleased with how simple this recipe was. I will be making this again!

Easy Key Lime Pie I

I modified this recipe based on the reviews. I used 2 cans sweetend condensed milk, 4 egg yolks and 1 cup key lime juice. I baked for 30 minutes @ 350. Pie did not set up properly and was very tart. I think it would have been better with 3/4 cup lime juice and at least 5 egg yolks. This was my first attempt at key lime pie. Hopefully my next one will turn out better.
