This has become one of my favorite recipes. I used to make meatloaf about once a year (at the most!). This meatloaf is so tasty. The quinoa keeps it moist. I also use Frank's Red Hot Sauce instead of a spicy hot sauce which can be overpowering. Instead of brown sugar, I use two packets of Splenda to keep the calories/sugar down. I started a diet 3-1/2 months ago and was looking for a healthier way of cooking. Replacing ground turkey for beef I thought would be kind of tasteless but it isn't. Last night I made it with cauliflower/potato mash. Since I had leftover meatloaf and potatoes I made a shepherds pie with the leftovers. Normally I make a meatloaf parmesan which tastes like a giant meatball covered in reduced fat mozzarella and marinara. It also makes a great meatloaf sandwich. Try this recipe, you won't be disappointed.
