Gluten-Free Yellow Cake

Reviewed: Jan. 7, 2010
I'm surprised at how well this is being reviewed. This recipe pops up everywhere on the internet when you search for a GF yellow cake and it receives around a two star rating. I agree with that. The taste is pretty terrible/funky and you must offset it with major frosting/candy/coolwhip etc. to make it edible. Today's picture made me laugh because that's literally what you need to do in order to eat this cake. It is also extremely spongy and by day 2 it was difficult to use my fork and enjoy a slice....the texture is just weird. I understand that GF recipes are hard to come by but don't just settle for mediocrity. I will continue my search for the perfect GF yellow cake and I hope you do as well. Until then enjoy some GF brownies or chocolate cake because those desserts are easily found via the internet and even the non celiacs in my house request my desserts.....just not this one!

Quinoa Side Dish

Reviewed: Dec. 20, 2007
3 out of 6 of us are gluten intolerant. I happened upon this recipe and it has forever changed our life! My husband (who is not a celiac) LOVES this recipe and has requested I find as many recipes as I can about quinoa because it's so healthy. I do sautee the onion and garlic with the quinoa and I use water and GF ckn. bouillon instead of the vegetable broth. Love, love, love this recipe! Thanks for the great rice alternative for my whole family.

Peanut Butter Marshmallow Squares

Reviewed: Jan. 24, 2006
I hate to be the first to give bad reviews but I really have to on this one! I made the recipe as is and it's just terrible. I guess I'm an old fashioned cook but I like my flavors to compliment eachother and this "snack" was the exact opposite from what I desire. My husband put it perfectly when he said that you could take a spoonful of each ingredient, eat them simultaneously and that would be your outcome. I thought it was disgustingly sweet and I honestly had to brush my teeth after eating them! I do not recommend this one, sorry.

Pear Honey

Reviewed: Oct. 15, 2005
We have an abundance of pears this time of year and I wanted a recipe that called for pears but also for canning them in some sort of fashion. This recipe was perfect and I can't wait until I can give these out for Christmas this year. Thanks for the submission!

Scrumptious Strawberry Shortcake

Reviewed: Jun. 4, 2005
Hands down the best shortcakes I've ever made! These shortcakes are flaky like a pie crust but soft and chewy like a biscuit. I prefer to add lemon extract with poppy seeds and to make 6 large rather than the 12 smaller ones. I also roll them in my hands and flatten on the cookie sheet and use half-and-half if I don't have the cream. I originally made this recipe following all ingredients to a T and it was delicious, my lemon version just sounded good one night. I also mixed in some fresh blueberries as they are good with lemon as well. Serve with homemade sweetened whipped cream and WOW! what a treat.

Honey Coconut Salmon

I love sweet things and this salmon is no exception! My 6 year old who won't even try fish ate 3 bites because she loves coconut. A very nice twist for salmon.

Daria's Slow Cooker Beef Stroganoff

Reviewed: Apr. 14, 2005
Oh man is this one a keeper! What a great recipe for such an inexpensive cut of meat (our supermarkets often have bogo specials). It's so savory and aromatic and best of all cooked in one pot so cleanup is a breeze. We use wheat noodles (believe me the added taste is to die for) and I've used low-fat sour cream with no change in taste from the high fat kind. I've also used white cooking wine with great results (may need to adjust salt content if you use). Definitely give this recipe a try!

Chicken and Lentils

Reviewed: Apr. 14, 2005
Suprisingly delicious-not a big lentil fan but I may change my mind!- my 11 month old couldn't eat it fast enough. As far as my other children were concerned-also not big lentil fans and not as daring as mom was to try them- the chicken was fantastic.

Grandman Pork Chops and Rice

Reviewed: Mar. 10, 2005
We have a large family so I had 2 skillets going (8 pork chops) and I added 1 can diced tomatoes with green chilis split between the two and 1 packet Sazon goya seasoning per skillet. I cooked a lot of rice and just added until it looked a tiny bit soupy so it wouldn't be dry the next day for my husband's lunch. Very tasty and fairly quick meal.

Banana Cheesecake with Caramel Sauce

Reviewed: Dec. 31, 2004
This recipe yielded a nice light and fluffy cheesecake. My only reservation about giving it 5 stars is the caramel sauce, we didn't really care for it and it made way too much. It was more like caramel milk, I guess I was hoping for something thicker. The cheesecake was fabulous though!

White Velvet Cutouts

Reviewed: Dec. 5, 2004
I make these every year with my children at the request of my entire family. I suggest rolling them out with a mixture of 1/2 flour and 1/2 powdered sugar for best results. The frosting recipe that goes with these is as follows: 3 1/2 c. conf. sugar, 3 tbsp. butter softened, 1 tbsp. shortening, 1/2 tsp. vanilla extract, 3-4 tbsp of milk. This frosting recipe dries quickly and has a nice shine due to the crisco. Just wanted to share seeing that I would be lost during the holidays without this recipe!

Amazing Butternut Squash

Reviewed: Oct. 2, 2004
This dish was exactly the type of squash dish I was longing to try! We are trying to cut back on our sugar use and most recipes using butternut squash are loaded with it! This not only fit our new guidlines but it tasted so yummy. I just baked it in a 10" pie plate and it was a wonderful addition to our dinner table. Thanks for submitting!
