Mother of 4 girls by day, waitress by night, and wife of the best man I've ever known! I don't have much time in my schedule for crafts or learning new things so cooking has always been my therapy. If I'm happy or stressed or want to spend some extra "mommy" time with each of my kids, food and baking always provides the outlet I need.
My favorite things to cook
I love to bake cookies. I am known mostly for my pies (never use commercial filling or pie crusts). I do love my slow cooker and anything that I can cook in there is definitely a favorite of mine! I enjoy baking breads (yeast and quick), and I'm trying to learn all about candy. Not so good with the candy but I'm going to keep trying.
My favorite family cooking traditions
Well Christmas is definitely a time where all of us (even my husband) cook. We make batches and batches of Christmas cookies that need to be frosted, dipped, rolled, cut-out, molded, or packed! We also make dog biscuits for all of our doggie family members (kids especially love that). All of my children know how to scramble eggs and cook them by age 3. Breakfast for dinner is a once a week tradition and they all fight over who will be the scrambler, my current 3 year old has been winning the most lately and gets a sense of satisfaction and pride when everyone eats and oohs and aahs over her eggs!

My cakes. I just can't seem to make a homemade cake that's anything more than a 9x13 frosted type! Seriously, my kids will request my homemade cinnamon rolls before they'd request me to make a cake for their birthday!

Gluten-Free Yellow Cake
I'm surprised at how well this is being reviewed. This recipe pops up everywhere on the internet when you search for a GF yellow cake and it receives around a two star rating. I agree with that. The taste is pretty terrible/funky and you must offset it with major frosting/candy/coolwhip etc. to make it edible. Today's picture made me laugh because that's literally what you need to do in order to eat this cake. It is also extremely spongy and by day 2 it was difficult to use my fork and enjoy a slice....the texture is just weird. I understand that GF recipes are hard to come by but don't just settle for mediocrity. I will continue my search for the perfect GF yellow cake and I hope you do as well. Until then enjoy some GF brownies or chocolate cake because those desserts are easily found via the internet and even the non celiacs in my house request my desserts.....just not this one!

Quinoa Side Dish
3 out of 6 of us are gluten intolerant. I happened upon this recipe and it has forever changed our life! My husband (who is not a celiac) LOVES this recipe and has requested I find as many recipes as I can about quinoa because it's so healthy. I do sautee the onion and garlic with the quinoa and I use water and GF ckn. bouillon instead of the vegetable broth. Love, love, love this recipe! Thanks for the great rice alternative for my whole family.

Peanut Butter Marshmallow Squares
I hate to be the first to give bad reviews but I really have to on this one! I made the recipe as is and it's just terrible. I guess I'm an old fashioned cook but I like my flavors to compliment eachother and this "snack" was the exact opposite from what I desire. My husband put it perfectly when he said that you could take a spoonful of each ingredient, eat them simultaneously and that would be your outcome. I thought it was disgustingly sweet and I honestly had to brush my teeth after eating them! I do not recommend this one, sorry.
