Broiled Asparagus with Lemon Tarragon Dressing

We loved it! My 3yo daughter munched them like they were licorice. The family was about evenly split on the dressing, so feel free to try the recipe without it. I also tried grilling the asparagus and it was awesome. Definitely doing this one again.

Shaved Brussels Sprouts with Bacon and Almonds

I was a doubter but am now a convert! All the adults liked it, but the kids (5yo and 2yo) stayed skeptical. It was a new food and they don't like change. I'll server it nine more times and they'll be converts also.

Chicken and Mushroom Chowder

This was pretty good. I used barley instead of rice and added some green beans I had laying around. It didn't make us stand up and cheer but it was good and filling.

Fabulous Football Dip

Lemon Snow Filling

Really is very sweet. Next time I'll reduce the sugar. Also, it makes about 4 cups of filling - way more than we need for crepes. We think it'll be excellent for frosting cakes or as the filling for cookie sandwiches.

Apple Sausage Pancakes

We use this syrup recipe ALL the time. I double or triple it and put some in the freezer for those times I can't get fresh apple cider. Yummy on any pancake! I don't have pumpkin pie spice (and have always found they have too much cinnamon for us) so I use a combination of nutmeg, cinnamon, cloves, allspice, and ginger.

Navy Bean Soup I

It was allright. Nothing you can't do with packaged Italian dressing. Also, keep in mind that two pounds of asparagus is a LOT.

Strawberry Bread

Mushroom and Leek Soup

Very good, quick soup. It turned out very salty for me, but that's probably because I ended up using boillon cubes instead of condensed broth (next time I'm going to try it with chicken broth). I also used rice instead of pasta and it turned out great. I did the recommended amount of white button mushrooms, but topped it off with some reconstituted dried porcini mushrooms (~2oz) I had laying around. They gave it a nice extra little flavor.

Irish Brown Soda Bread

This bread is incredibly dense. The crust was so hard I thought it was a goner, but when I opened it up and spread butter on it it was yummy. Not what I was looking for, but still pretty darn good. My partner ate a whole loaf before dinner.

Spinach Cheese Pie

This was good, but turned out pretty runny for me and didn't hold together. I'll make it again with shredded mozzarella and cook it longer (to get a crispy crust). The taste was excellent, though.

Cream of Fresh Asparagus Soup II

This was so tasty we ran out and bought asparagus so we could make more! Remember that you can use the big asparagus that you wouldn't use otherwise because it's going to be pureed. Other than doubling the recipe the only thing I would change is that I would save the asparagus heads after sauteeing and use them as garnish instead of pureeing them. Excellent recipe!

Creamy Bacon Cheddar Dressing

This was okay as a salad dressing but awesome as a dip for buffalo wings! Be warned, though, that it makes LOTS of salad dressing. I will definitely cut the recipe in half when I make it again.

Easy Mushroom Rice

This was super-easy to make. Since our household love mushrooms I doubled the amount and it received rave reviews. My only complaint is that it's pretty fatty, so try to use good-for-you broth/boullion and cut the butter in half. Everyone asks for it now!

Lime Chicken Picante

This was so good it's now in my permanent collection! It was incredibly easy to make (1 lime equals one tablespoon of lime juice) and enjoyed by everyone at the dinner party. I made it with dark meat and white meat instead of all breasts. Also, there wasn't really enough marinade remaining to make the glaze. I served it with the yogurt and crushed pineapple -- my guests said that the pineapple gave it just the right amount of tartness. A real winner!

Broiled Scallops
