Over the Fire Scalloped Potatoes

Excellent, easy recipe. I cooked them in the oven at 400 for about 40 minutes. I let them cool for a bit and then packed them in tin foil, will reheat for camping tomorrow (I thought it would be easier to pre-cook them rather than mess around later). I would making these again to take camping or as an every day side dish.

Wow, great crust. Make sure you only use half of the dough per pizza, other wise you end up with one thick crust!!

Quick and Easy Brownies

Let me start by saying I have TERRIBLE luck with brownies. They usually burn, fall flat or just don't taste good but this recipe? Well it was great! The brownies were thick, moist and delicious. I followed other reviews and used only one cup of flour, I also substituted the walnuts for white chocolate chips. This is a definite keeper which I will be making again and again!

Best Chocolate Chip Cookies

I used milk chocolate chips in this recipe since I prefer the taste, next time I would only use 1.5 cups. I also substituted the chopped walnuts for skor bits. They were delicious!

Rhubarb-Raspberry Crunch

I had a ton of raspberries and rhubarb to use from my garden and thought I'd give it whirl. The end result was good, not perfect but I would make it again with a couple of tweaks. Next time I would cut the sugar in half, it really is very sweet and completely over powers that tart. I would also double the oatmeal crunchy topping as I found it to thin. I also made it in a 9x9 pan as I thought a 9x13 would turn out way to thin!

Sweet, Sticky and Spicy Chicken

I followed other reviewers and floured the chicken before frying it, I skipped the oil and used cooking spray instead, cooking the chicken over med- high heat for about 8 minutes. For the sauce I followed the ingredients exactly. I read other reviews where people had issues getting the sauce to thicken so I combined a teaspoon of corn starch with 4 teaspoons of hot water and mixed it in with the sauce after pouring it into the pan. I let it simmer over low heat for about 5 minutes and it turned out great. Sticky, sweet and really spicy!

Green Bean Stir-Fry

I have been meaning to review this for awhile now. The green beans are just excellent! My only comment would be to watch the amount of peanut butter you use, I used to much one time and they were not as good as they usually are. This receipt is a keeper though, I have made it several times and will keep on making it!

Cream Cheese Frosting II

Really easy to make. I followed the other suggestions and only used one 8 oz package of cream cheese and upped the icing sugar to 3 cups. It was pretty runny when I finished mixing it so I put it in the fridge for a couple of hours and it firmed up. The resulting icing was a little sweet for my taste, but I served it between two gingerbread cookies to my husband (who has a real sweet tooth) and he could not get enough!
