The Ultimate Chili

Not bad! I omitted the wine vinegar and doubled the chili powder and it came out very well. This chili had a distinctly sweet flavor. Next time, I will leave out 15 ounces of beans and add at least 1/2 lb more of ground beef. It was a bean-heavy, meat-light recipe so if you like a meatier chili, definitely add 1/2 lb more beef.

Caper Baked Chicken

Dry, dry, dry!!! Flavor was OK, but that didn't make a difference given how bone-dry it turned out. Maybe it was because I baked it in a Pyrex dish and not a clay pot...?

Pumpkin Pie I

Excellent, deliciously perfect flavor! Only the cooking time is more like 1 1/2 hours total after reducing the oven temp to 325. Important: do NOT eat this pie warm...it tastes kind of "vegetable-y" straight out of the oven. My (honest) guests all thought the same thing. However, it was AWESOME the day after. Chill it overnight, enjoy it cold with some fresh whipped cream, and you are going to be in pumpkin heaven!

Mandarin Orange Cake I

Oh my, this cake was AMAZING. My guests raved over it, and everyone had seconds and even thirds! It was incredibly quick and easy, too. So moist, flavorful...yet very light. Not heavy and overwhelmingly rich like most cake recipes around. The icing was a big hit too, silky and not too sweet. The only thing I changed about the recipe was to sprinkle shredded coconut over the icing. Great for presentation and it enhanced the subtle fruitiness of the cake.

Gooey Bars

I was excited to try this recipe, but I won't be making it again. It's like eating raw cookie dough with extra sugar and butter added. I used half the amount of sugar called for, but they still turned out way too sweet! Don't get me wrong, I LOVE sweet desserts, but this was just too much. My husband and friends agreed. I also found the cake dough to be fairly hard to work with (very crumbly and difficult to spread), and the cream cheese layer is too thick and sticky to pour evenly over the chips. Better to simply mix the chips in with the cream cheese and save yourself some trouble.

Easy Lemon Cookies

Very sweet and lemony! Slightly crispy on the outside and soft on the inside. I rolled mine into balls and they turned out perfectly. (though it did take awhile to roll ALL those cookies!) In my oven, they needed 10 minutes to cook thoroughly.

Caprese Salad

This wonderful salad is like something you'd order at a gourmet restaurant. *Fresh* mozzarella is a must. I used yellow and red heirloom tomatoes, and followed the recipe exactly as written. It was perfect, EASY (took all of 2 minutes to prepare), and my guests loved it!

Buttery Cooked Carrots

Quite tasty! The hint of sweetness really added to the carrots' appeal. It wasn't as amazingly wonderful as I had expected (based upon reading the other reviews)...but it was a good solid side dish, perfect for weeknight meals!

Best Baked Chicken

I can't believe how easy and delicious this is! The chicken came out tender on the inside, crispy on the outside. I omitted the soy sauce and replaced the garlic salt with garlic powder -- seemed to work out well, although next time I will keep the garlic salt because the chicken could've used a bit more savoriness.

Beef Noodle Shepherd's Pie

I used Onion Soup mix (store didn't have beef onion flavor) and it worked out fine. I made enough mashed potatoes for 10 servings (according to product box) - and that was just right. 2 cups of mashed potatoes is definitely not enough to cover a 13x9 pan. I added 1 can of corn, and 1 can of green beans, and topped it all off with both paprika and shredded cheddar cheese. I found that 1 1/2 pounds of ground beef was the perfect amount. Hubby loved it, it was very flavorful and a great comfort food!

Tuna Delicious

Very tasty, simple, and quick recipe....perfect for a weekday dinner or lunch. I doubled the tuna and it came out just right -- any less and you won't taste much tuna. The sauce was the perfect amount for a 12 oz. package of egg noodles. Serves 4 dainty appetites, or 3 hearty ones!

Enchiladas

VERY yummy! Tasty and simple, although next time I will use flour tortillas as suggested by others. I used supposedly high-quality corn tortillas and they ripped open even though I was very careful not to over-fill them. Also, next time I will garnish with chopped tomatoes and cilantro, this would lighten up the recipe a bit. By the way, if you're making 6 enchiladas, they won't fit in a 7x11" pan. Try 9x13 instead. Also, you'll have lots of delish leftover ground beef...I put mine in hard taco shells the next day - YUM! Lastly, don't forget to wear gloves while dicing the jalapeno!!! (I learned that lesson the hard way)

Crispy Fish Fillets

Quick and easy, with yummy results! My hubby loved it! Very crispy and flaky outer coating. I didn't have regular mustard so I used Dijon, which was just fine. I actually thought that the dish wasn't salty enough (unlike other reviewers) so I will add more salt the next time around. Will definitely make this again!

Beer Cake I

My husband and his friends loved this cake. We used Sam Adams beer and it worked great. The beer made the cake light, fluffy, and moist. NOTE: this cake tasted much better on the second day, after the beer flavor had settled in and became less overpowering.

Chocolate Banana Cream Pie

Drip Beef Sandwiches

Tender, delicious and delicately spiced! I halved the recipe and had more than enough for SIX french roll sandwiches. Because the flavor was so subtle, I sprinkled monterey jack cheese, salt, and pepper onto the sandwiches and they turned out wonderfully!

Snickerdoodle Cake I

Although this is a delicious, light, and fluffy cake, it isn't particularly moist and will become even drier within 24 hours! So, be sure to serve it warm straight out of the oven. Perfect as breakfast with coffee, or dessert with vanilla ice cream. I added a pinch of nutmeg and 1 tsp vanilla to the batter - worked great. I left it in the oven (350 deg) for 32 minutes, perfect amount of time. Easy to make and you should already have all the ingredients in your pantry.

Noodles

A very yummy, quick recipe if you're craving comfort food in a hurry. I was surprised at how good it was! Be sure to use both cans of condensed soup because the noodles will be dry the next day if you don't. I used Cream of Chicken instead of mushroom - turned out delicious! Would recommend using a bit more garlic salt for more savoriness.
