Salsa Chicken Rice Casserole

Really easy to make, especially if you use rotisserie chicken and leftover rice. I added a can of drained corn and followed the suggestion of cutting back on cheese and cream soup and it was perfect. I think I'd add in a can of rinsed black beans and some dice zuchinni next time too to get some more vegetables in. My husband and I like things a bit spicier so I added in a couple dashes of hot sauce (Bob's Habanero Hot Sauce, it's here on Allrecipes), it was still pretty mild so I plan on using a bit more next time.

Pork and Veggie Saute

Delicious, my husband loved it and was sad that it was a small, 2-person dish instead of the standard 4-6 person dish. Definitely use reduced-sodium soy sauce unless you like things salty.

Mushroom Pork Chops

Excellent recipe!!! Works great with chicken. Only changes I made was to saute the onions, mushrooms, and some slice garlic before browning the chicken and adding the cream soup.

Penne with Spicy Vodka Tomato Cream Sauce

My husband LOVED this dish even though I managed to make lots of mistakes while making the dish (I forgot the sausage, used diced tomatoes with garlic and olive oil instead of crushed tomatoes, and half-and-half instead of cream). Fast and easy to prepare, great for weeknights, and turns out great when you're distracted and not following the recipe

Slow Cooker Enchiladas

Easy to prepare, can be done in a slow cooker or an oven. I taught my brother how to make this dish and he made it for the rest of the family a week later and they enjoyed the enchiladas as well. To cut back on calories, use the healthy choice or fat-free cream soups and add extra salsa for more flavor.

Bob's Habanero Hot Sauce - Liquid Fire

Meatless Mushroom Tart

A bit time consuming for the average weeknight meal. I cut the recipe in half and baked it in individual-sized dishes. After baking the crust, I added the mushroom mixture to the crust without chilling it. The texture of the crust was slightly off as a result but it still tasted delightful and my husband gobbled it down.

Garlic Chicken with Orzo Noodles

My husband and I love veggies and frequently add in some sliced carrots, broccoli, and whatever else we happen to have on hand. I like to add a splash of dry white wine after the garlic and red pepper have been browned. It's a great side dish if you leave out the chicken or it can be a nice and light summer meal with grilled chicken or fried fish

I cut the recipe in half and it still made more than enough for my husband and I. Followed the directions exactly with the exception of using more stock as it wasn't enough to cover the noodles and vegetables. The dish ended up with a slightly off flavor and we couldn't figure out why.

Lemon Chicken Piccata

First time I made this dish it had a bit too much lemon for me and my husband. Second time I made the dish I thinly sliced half the lemon and then gently squeezed the remaining half into the dish. It was perfect. I love capers, so I add an extra spoonful or two right at the end.
