Fabulous Zucchini Grinders

Reviewed: Oct. 2, 2011
This really was fabulous but only thanks to the comments of others. I cooked zucchini in a saucepan with a some onions and oil. When they were almost ready, i added 3 gloves of minced garlic and several spoons of sauce (wanted to have more of zucchini taste than sauce). After a coupe of minutes i added a bit of shredded mozarella and feta chesse. They melted immediately. I then served the zucchini on toaster toasted bread covered with shredded mix of mozarella, feta and basilic. Soft zucchini on crunchy bread was absolutely fabulous and served us as a nice dinner. Will make them again for sure. Thanks everybody

Apple Goat Cheese Bruschetta

Reviewed: Mar. 4, 2013
I just made this and yummmyyyy. Just cut an apple into small pieces, added goat cheese mixed with dry thyme and oregano (I did not have any fresh) and baked it (did not even put on bread). Really good, I will be making these for my daughters first birthday buffet since it was still yummy once it was cold.

Marshmallow Fondant

Reviewed: Mar. 9, 2013
This is a great recipe. I did it yesterday for the first time and it turned out great. I prepared in the morning, put in the fridge and started working with it in the afternoon. First i tried to roll when it was still cold and it didn't work. Then i waited a bit more and it rolled perfectly. Transferring it on a cake worked great even the very first time. This will be my fondant recipe. Thanks a lot.

Braised Balsamic Chicken

Reviewed: Mar. 7, 2013
I am giving the recipe 5 stars since the mixture of herbs with (in my case) tomato sauce was very good. Even without rosemary that i didnt have. I didn't really like the balsamic vinegar even with half the dose. However, the next day it had a bit of a barbeque sauce taste to it. So I added a little more and it tasted great. I had cut the chicken into small bites and after the cooking mixed everything with canned green beans. It was sooo good. Will definitely do it lots and lots of times.

Chicken with Quinoa and Veggies

Reviewed: Oct. 23, 2011
This was really delicious. I modified a bit according to what I had. I precooked pork meat and it it's buillon coocked quinoa. I used two zuccinis, red and green bell pepper and 3 tomatoes. I basically put everything together and when pepper was ready added the quinoa and a bit of feta cheese. I think lemon juice is very very important and seems to make all the difference. My husband loved it as well. I am sure it will be even better with chicken. Thank you for this recipe.

Marinated Carrots

Reviewed: Oct. 1, 2011
Sorry, I really didn't like it. There was just sooo much vinegar. I could only taste the acid. I think it would have been better without it.

Broccoli with Garlic Butter and Cashews

Reviewed: Jan. 20, 2014
I put very very little butter, but this recipe was super delicious. I did not have cashews and replaced them with peanuts and this was still very delicious. A bit too much salt though. Next time i will look for low sodium soy sauce.

This was sooooo good. I added 2 cups of milk to make more like a soup and reduced the quantity of butter. Really this is the best mushroom soup. Will definitely make this many many times since my 1.5 year old ate it too. Thanks for the recipe.

Yummy, I didn't marinate overnight. I cut the chichen into small pieces and just made a big calzone like thing. My husband loved it too. I thought there would be too much garlic but at the end it was enough.
