Baked Teriyaki Chicken

Reviewed: May 18, 2013
Followed the recipe exactly, but doubled the amount of everything for the sauce and used breasts instead of thighs. So, so good. Put about half of the sauce on the chicken, baked for 10 minutes, then drizzled some more on, baked for 10 more minutes, added a bit more and left them in the oven til they were done. Had some sauce left over. My husband said it was the best thing I've ever made...and I had to agree. :)

Mandi's Cheesy Potato Soup

Reviewed: Mar. 15, 2013
This was really good. As written, a 4-star rating. I added half of a beef bouillon cube to the water, and had half a zucchini that needed to be used, so I threw that in as well. Plus a bit extra of the carrots and celery (a whole celery stalk, and two medium carrots). Left the skin on the potatoes, too. Super, super delicious. Oh, and I didn't have any pre-made steak seasoning, so I found a recipe which called for hot pepper flakes, dill, coriander, peppercorn, and garlic powder, all of which I chucked in liberally. Got raaaave reviews.

Pumpkin Pie I

Reviewed: Nov. 14, 2012
This was my first attempt at pumpkin pie, and I was so happy with how it came out. It was delicious! As has been noted by other reviewers, the baking time is a bit off--after turning the heat down, I baked it for just over an hour--but otherwise it was perfect. I should mention that I didn't have corn syrup and just used honey instead, and it tasted exactly the way a pumpkin pie should taste! No need to search for a different recipe.

Sweet Potato and Black Bean Chili

Reviewed: Nov. 2, 2012
This was so, so good. I added some corn and celery when I put in the beans and sweet potato, and it all blended together wonderfully in my opinion. Will definitely make this again!

Banana Pumpkin Bread

Reviewed: Oct. 27, 2012
Delicious! I added a bit extra of the spices as suggested, used 3 bananas instead of 2, and baked for 50 minutes. It came out perfectly! Moist, chewy, and flavorful. Loved it.

I've made this a million times now, and my husband keeps requesting it. It's become the staple steak side dish in our house. Delicious.

Bill's Blue Cheese Dressing

Reviewed: Sep. 26, 2012
Awesome. I'm an expat living in Spain where blue cheese dressing is not common and often difficult to find, and every time I get together with my American friends I make this for dipping celery in and get rave reviews. Definitely hits the spot.

Cranberry and Almond Rice Pilaf

Reviewed: Sep. 26, 2012
This was exactly what I was looking for...super easy and delicious. I didn't have jasmine, so I used brown rice instead, and it came out wonderfully. Perfect side for some chicken or fish. Will definitely be making this more often.

Creamy Salmon and Leek Pasta

Reviewed: Jun. 27, 2012
DELICIOUS. I'm not even a huge fan of fish, but we had some salmon in the fridge that needed to be used, and I'm so glad I tried this recipe. The leeks really absorb and retain the flavor of the wine and butter, and the sauce was just the right amount of 'creamy'. I used spinach pasta noodles instead of regular spaghetti, and served it with a side of garlic asparagus, and my boyfriend and I both loved it. I can't believe nobody else has rated this recipe yet! Will definitely be making it again.

French Onion Soup I

Reviewed: Dec. 18, 2011
Delicious! Used brown sugar instead of white, croutons instead of bread, and added a few dashes of Worcestershire, salt, pepper, and thyme as recommended by some other reviewers. Also threw in some thinly-sliced mushrooms. Husband said it was the best soup he'd ever tasted, and has even requested that I make it for our Christmas dinner at HIS family's house! Success! :)
